How To make Date Topped Cake
-MARY WILSON BWVB02B 1 c Dates; chopped
1 ts Soda
1 c Boiling water
1 1/2 c All-purpose flour
1 ts Baking powder
1/3 ts Salt
1 c Sugar
1 Egg; beaten
1 tb Butter or margarine; melted
1/2 c Nuts; chopped
DATE TOPPING:
1 c Sugar
2/3 c Boiling water
ds Salt 1 c Pitted dates; chopped
1/2 c Nuts; chopped
Pit and cut up dates; add soda dissolved in boiling water and let stand In bowl, combine flour, baking powder, salt and sugar; add to dates along with egg and butter. Mix well; stir in nuts. Turn into greased 80inch baking pan. Bake in 350~F oven for 55 minutes. Topping: Combine sugar, boiling water, salt, pitted dates and nuts. Pour over cake as soon as it comes from over. Let cake cool in pan. Serve warm or cold, topped with whipped cream, if desired. Makes 9 servings. -----

Date Cake With Caramel Sauce | Home Cooking
Date Cake - Recipe
Ingredients: Pitted Dates - 250 gms
Baking soda - 1 tsp
Water (Boiling Hot) - 1 1/2 cups
Flour Mix:
All Purpose flour - 2 cups
Baking powder - 1 tsp
Salt - 1/2 tsp
Softened unsalted Butter - 125 gms
Brown Sugar - 3/4 cup
Vanilla Essence - 1 tsp
Eggs - 2 nos
Walnuts - 1/2 cup (chopped)
Caramel sauce for dressing:--
Unsalted Butter - 50 gms
Brown Sugar - 3/4 cup
Vanilla Essence - 1/2 tsp
Fresh cream - 200 ml
Method:
1. Soak the dates in baking soda & boiling hot water for 30 minutes
2. Mix all purpose flour, baking powder & salt. keep aside
3. In a bowl, add butter, brown sugar, vanilla essence and blend well
4. To that add eggs (one after the other) and blend
5. Add the soaked dates and flour mix gradually and blend to a batter
6. Mix chopped walnuts to the batter
7. Grease the cake tin (optional: Place butter paper) and pour the batter and spread it even
8. Preheat the oven for 15 minutes at 180 degrees. Bake 40 min at 180.
9. To make caramel sauce: cook the butter, brown sugar, vanilla essence & fresh cream in medium flame till it bubbles up.
10. Dress the cake with the sauce! Done!!

Here in my recipe video, I have used sunflower oil but you can also use vegetable oil, coconut oil, mild olive oil, melted butter whatever you wish to use.
This is so easy, and believe me this cake was so moist, the texture was perfect, the cake was insanely good – not too sweet. Overall, the cake was beyond perfection!

Carrot and dates cake is one of my most favourite cakes to have along with a cup of coffee or tea. The cakes are made in many different shapes, with cream cheese frosting, a dusting of icing sugar or simple and plain.
No special equipments are required to make this delicious cake and the cool thing is that we will need just a wooden spoon to make this super delicious date cake.
Baking Time: 55-60 mins || Serves: 8-10 slices
Ingredients:
Dates: 200g(pitted)
Carrot: 1 cup(grated)
Cashew Nut: 1/3 cup
Plain flour: 225g or 1 and 3/4 cups
Butter: 200g
Sugar: 150g 3/4 cup cup
Mixed spice: 1 tsp (1/2 tsp Cinnamon, 2 Cardamom, 2 Cloves)
Baking powder:1 tsp
Baking soda: 1/2 tsp
Salt:1/2 tsp
Eggs (medium): 3
Vanilla Extract:1.5 tsp
Caramel Syrup : 3tbs [molasses/dark brown sugar]
Orange Juice : 2-3 tbs
** Preheat oven to150°C for 15 mins before baking
▶How to make Caramel Syrup?
Add 1/2 cup sugar & 1 tbsp water in a sauce pan. Heat it & let the sugar melt. When the color of the melted sugar turns to golden brown to dark brown, remove the pan from fire & add 1/4 cup warm water to this. Be very careful at this stage, since the water tends to splash & can cause burns. Bring it back to the heat & boil for a few more mins, 3-4 mins or until it turns to honey consistency. Remove from fire & let it cool completely. You can prepare the caramel in advance & refrigerate it.
