1 3/4 c All-purpose flour
1 c Granulated sugar
3/4 c Unsweetened dark cocoa
-powder 1 1/2 ts Baking powder
1 1/2 ts Baking soda
1 ts Salt
1 1/4 c Buttermilk
1 c Packed light brown sugar
2 Eggs; lightly beaten
1/4 c Vegetable oil
2 ts Vanilla
1 c Hot strong black coffee

In large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add buttermilk, brown sugar, eggs, oil and vanilla. Beat with electric mixer on medium speed 2 minutes. Whisk in hot coffee. (Batter will be quite thin.) Pour batter into greased, floured 12-cup bundt pan. Bake in preheated 350F oven 60 minutes or until tester inserted comes out clean. Cool on rack 10 minutes. Remove from pan; cool. -----

Ingredients
* 50g (4 tbsp) sugar
* 3 eggs
* 1/4 tsp salt
* 20g (2 tbsp) plain flour
* 1 tsp vanilla essence
* 170g dark chocolate (60% or personal preference)
* 110g unsalted butter
Method
1. Butter six ramekins and dust lightly with cocoa powder. Chill in the fridge for 10 minutes.
2. Melt the chocolate and butter over a bain marie until smooth and silky. Remove off the heat and add in your instant coffee powder, mix it in well and then allow the mixture to cool down.
3. In a separate bowl add in your eggs, sugar and salt and whisk until light and aerated. Add in your flour and vanilla essence and fold it in. You can also sift your flour in to allow easier folding.
4. Gradually pour in the melted chocolate and stir well.
5. Pour the cake batter into the prepared ramekins. Place them in the fridge to chill for around 10 - 15 minutes. In the meantime preheat your oven to 200 °C/ 180 °C Fan/Gas mark 6.
6. Bake the cakes in the oven for 9 - 10 minutes. The cake should be coming away from the sides and the centre will have a slight dip as it is still soft.
7. Once baked, remove from the oven and let it cool slightly for one minute. Run a knife around the edge of the moulds to loosen. Invert the cake onto a serving plate and dust it generously with icing sugar. Serve immediately with your favourite ice cream.

* 4 egg yolks
* 130 gr. sugar
* 40 gr. corn starch
* 1 teaspoon vanilla
* 400 gr. Hot milk
* 1 cup heavy cream
Diplomat Cream Directions:
* Mix the egg yolks, sugar, corn starch and vanilla and stir.
* Add the hot milk on the mixture and on the stove mix for about 5 minutes until thick.
* Take out of the stove cover the custard and let chill.
* Whip the heavy cream then add the custard and mix.
