How To make Dijon Chicken Kabobs
1 pound small red potatoes
halved
3 Tablespoons honey
2 Tablespoons Dijon mustard
1 Tablespoon fresh lemon juice
1/2 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
1 pound skinless boneless chicken breast :
cut in 32 pieces
16 large mushrooms stems removed
16 cherry tomatoes
Preheat the grill to a medium heat. (When ready to cook, spray the rack:
off the grill--with nonstick cooking spray. In a large pot of boiling water, cook the potatoes for 10 minutes to blanch. Drain.
In a small bowl, combine the honey, mustard, lemon juice, thyme, and pepper. Add the chicken and mushrooms, tossing to coat well.
Alternately thread the chicken, mushrooms, tomatoes, and potatoes onto 8 skewers. Grill the kabobs, covered, turning occasionally, for 8 minutes or until the chicken is cooked through. Divide the skewers among 4 plates and serve.

These chicken kabobs are the bomb!! they will make the most delicious meal, and the bbq sauce is amazing, always a hit at my house. You can side them with just about any one of your favorite sides to make it the perfect meal.❤
❤❤ SEASONING❤❤
8 CHICKEN THIGHS
Bacon as needed
1 Tbsp paprika
1 Tbsp garlic powder
2 tsp onion powder
1 tsp oregano
1 1/2 tsp brown sugar
1/2 tsp pepper
1 tsp cumin
olive oil
red bell peppers
Onion
Salt (to your liking)

1/2 CUP BBQ sauce
1/4 to 1/3 honey
1 tsp yellow mustard
3 tsp adobo sauce
(Adjust to your liking)

Cut chicken, peppers, onions into pieces to fit your skewer...season well with seasoning and rub well with olive oil...arrange on skewer
BAKE IN OVEN 350° FOR 30 MINUTES...
glaze well after 15 minutes of baking, then again the last 3 minutes.

Marinade
Chicken Breast- 3lb
Mustard- 1 cup
Oregano- 2 tsp
Salt- 1/8 tbs
To clean chicken
room temperature water- 3 cups
white vinegar- 1 1/2 cups
Marinate
Step 1: Mix mustard, oregano, and salt into a bowl
Step 2: Cover and place in the fridge for 30 minutes
Prepare Chicken
Step 3: Cut chicken into 1-inch pieces add to a bowl
Step 4: Add white vinegar and water
Step 5: Let the chicken sit for 20 minutes
Step 6: Pour out the water and vinegar
Step 7: Combine the mustard mixture with the chicken
Step 8: Assemble the skewers
Step 9: Grill for 15-20 minutes

2 boneless, skinless chicken breasts, cut into 1 1/2 inch chunks
1 teaspoon ground cumin
1 teaspoon smoked paprika
2 tablespoons Dijon mustard
8 button mushrooms, cleaned
1 red onion, peeled and cut into large chunks
8 cherry tomatoes
1 small zucchini, cut into 8 pieces
Salt and pepper
Extra-virgin olive oil for brushing
In a medium bowl, mix together chicken, cumin, paprika, mustard and a pinch of salt. Thread vegetables and chicken onto flat metal skewers, alternating meat and vegetables. Place in a plastic container, cover and refrigerate 2 hours or overnight.
Prepare grill for medium high heat. Lightly brush skewers with a small amount of olive oil. Sprinkle with salt and pepper. Grill until chicken is cooked through, about 4 minutes per side. Serve immediately.
