How To make Dry Sauteed Green Beans
5 ts Peanut oil or canola oil
1 cl Garlic, peeled & minced
1 ts Minced gingerroot
1 lb Green beans (2" pieces)
1 ts Oriental sesame oil
1/2 ts Salt (optional)
1. Heat the oil in a wok or skillet. Add the garlic and ginger, and
stir-fry the ingredients for 30 seconds. 2. Add the green beans, and stir-fry them over high heat for 2 to 4
minutes. 3. Add the sesame oil and salt (if desired), toss the ingredients to
coat them, and serve the beans. Preparation tip: The beans are supposed to be tender-crisp and shriveled or even charred a bit on the outside. If you like tenderer beans, cover the pan after adding the sesame oil and salt, and continue cooking the beans for a few minutes over moderately low heat.

I never understood why parents have such a hard time forcing their kids to eat their green beans... The Chinese stir fry way of making them is just so tasty. I’m going to show you how to make dry-fried green beans with minced pork and olive vegetables. It’s easy to make, super flavorful and goes so well with rice. I’m going to give you all the tips on how to buy, prepare, and make restaurant style green beans without all the oil at home.

INGREDIENTS
350g Green beans
Pork marinade (can omit for vegetarian version)
100g Pork butt, minced
½ tsp Sugar
1 tsp Soy sauce
½ tsp White pepper
½ tsp Cornstarch
1 tsp Oil
Stir frying
1 tbsp Oil
1 tbsp Chinese olive vegetable
2-3 cloves Garlic, minced
½ tsp Soy sauce
½ tsp Oyster sauce
½ tsp Sugar
1-2 Dried chili
⅓ cup Water
METHOD
Prepare the beans by snapping off the ends and pulling off the ‘stringy part’. Then break it into smaller sizes.
Marinate the minced pork with sugar, soy sauce, and white pepper. Mix it in well. Add cornstarch then seal it with oil. Set it aside.
Heat your wok on high heat, add in your oil then stir fry your green beans. Fry it till it’s slightly blistered and green. Remove the beans from the wok.
On medium heat, add in your minced meat, break it apart with your wok spatula and cook until it changes color. Add in your olive vegetables, garlic, and dried chilies. Stir fry till fragrant.
Add your beans back in. Splash in some water, add the sugar, oyster sauce, and soy sauce and cook till all the liquid is absorbed / evaporated. At the end, there shouldn’t be any sauce or liquid leftover in the wok.
You can test if the beans are done by softly poking it with your wok spatula. If it goes through that means you have the right texture.
Enjoy with a big bowl of rice. :)
