Russian Chicken Meatball Soup
Russian Chicken Meatball Soup is so light and fresh, made with aromatic vegetables, potatoes, rice and the most tender chicken meatballs. This is a soup that is a favorite with the whole family.
It's really easy to make, very comforting and soothing and is even great as a leftover.

Ingredients:
For soup...
4 Cups Vegetable Stock + 2 Cups Water
1 Small Onion + 2 Medium Carrots
2 Stalks of Celery + 2 TB Dried Parsley
1/2 to 1 Cup Vermicelli Noodles
+ Salt, Pepper, and Maggi to taste
Optional: 1 bouillon cube
For meatballs...
1/2 LB Lean Ground Beef
1 TB Maggi or use Worcestershire Sauce
1 TB Dried Parsley + 1 TSP Onion Powder
1/2 TSP Salt + 1/2 TSP Black Pepper
1 TB Plain Breadcrumbs
Make the meatballs by first blending the dry ingredients together with a whisk. Then add ground beef and Maggi (or Worcestershire sauce) Mix well then form smalls balls. Cover and refrigerate.
On the stove in a medium pot, heat up the stock and water. In the meantime, finely dice your carrots, celery, and small onion. Add them to the stock then add parsley and bring to a boil. Once boilng slowly add small meatballs. Add salt, pepper and Maggi to taste. Cook for 1 hour or until vegetables are fork tender. Add the vermicelli noodles in the last five minutes. Enjoy.

4 large potatoes medium chopped
3 large carrots medium chopped
3 medium celery stalks medium chopped
3 cups bell peppers medium chopped
2 medium zucchini medium chopped
1 medium onion finely chopped
2 cups corn fresh or frozen
6 cups vegetable stock low sodium
28 oz can diced tomatoes low sodium
3 bay leaves
1 tsp smoked paprika
1 tsp dried oregano
1 tsp garlic powder
3/4 tsp salt
Ground black pepper to taste
1 tbsp avocado oil
1 medium garlic clove grated
1/3 cup dill or parsley finely chopped
Parmesan cheese and yogurt for garnish

►DIRECTIONS:
1. Preheat large dutch oven or large pot on medium heat, swirl a bit of oil to coat and add onion. Cook for 3 minutes, stirring occasionally. Add smoked paprika, oregano, garlic powder, salt, pepper and bay leaves; cook for 1 more minute, stirring frequently.
2. Add potato, carrot, celery, pepper, stock and diced tomatoes; stir. Bring to a boil, cover and reduce heat to low and simmer for 25 minutes or until potato is fork tender.
3. Add zucchini and corn, cover and simmer for 5 more minutes. Turn off heat, add grated garlic and dill.
4. Serve hot garnished with Parmesan cheese and yogurt.

Grilled Cheese & Roasted Tomato Soup

Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.
