We are back with the How to Cook Hungarian Goulash Soup Properly [Goulash vs Goulash] to the Goulash recipe as some confusion is around. The Hungarians refer to the Goulash Soup when speaking about Goulash, while internationally the Hungarian Beef Stew is known as Goulash.
Here in this video I am sharing the recipe of How to Cook Hungarian Goulash Soup Properly, after the pervious video where the Goulash as Goulash Stew recipe was shown.
The basic recipe is identically same as the Hungarian Beef Stew's, the differences are the more liquid soupy consistency and the added vegetables.

Ingredients for 2 portion:
300 g Beef shank
180 g Onion
2 cloves of garlic
1 tbsp sweet paprika powder
0.5 pc small tomato
0.5 pc pepper
salt, grounded black pepper, caraway seed
oil, water
1 pc carrot
1 pc parsley root
1 pc potatoes
0.5 pc parsnip
Hungarian chili peppers if you like spicy ;)

Hungarian Goulash
Recipe Karoly Gundel. 1954. I made old recipe because it is still the best goulash you can ever make.
Ingredients
3 slices bacon or vegetable oil
2 lb beef
1 onion
1 lb potatoes
2 bell peppers
1 tomato
5 tbsp sweet paprika
2 garlic cloves
Salt/Pepper/Caraway Seeds
1 pack beef broth
Dough
1 cup flour
1 egg
Salt
Fry bacon to get fat of it, remove and add onion, cook until golden and add beef. Brown the meat, add paprika and 1 cup of beef broth, simmer on low-medium heat for 30 min. Add potatoes and more broth. Make pasta as shown on video, when potatoes almost ready add peppers, tomato and pasta. Cook 15 more minutes and remove from heat. Add garlic/salt/pepper and caraway seeds. Let goulash rest for 10 min and serve.
Goulash is not soup! Maintain the liquid (broth) during cooking!

Ingredients for the vegan creamy Hungarian mushroom soup⎜easy, simple ingredients:
- 1 1/2 TBSP vegan butter
- 2 TBSP Flour
- 1/2 cup chopped onion
- 300g mushroom ( button, cremini or portobello)
- 2 cups vegetable stock, veggie bouillon or water
- Salt to taste
- pinch of black pepper
- 2 tsp Spanish paprika
- 1 TBSP dill
- 1 TBSP lemon juice
- 1 sprig fresh thyme
- 1 TBSP vegan sour cream
INGREDIENTS FOR THE VEGAN SOUR CREAM:
- 1 cup raw cashew (soaked for 2 hours or overnight)
- 1/2 cup water
- 1/2 tsp apple cider vinegar
- 2 TBSP lemon juice
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- salt to taste
- white pepper or cayenne, pinch
--- METHOD:
- FOR THE SOUP:
- In a deep pot, add the vegan butter, let it melt then add the onions, saute for 7 minutes in medium high heat
- add the mushrooms and the salt, saute it for 7 minutes more
- add the flour, mix well for 2 minutes
- add the lemon juice, dill, fresh thyme, and the paprika, stir
- add the garlic powder, and the water or veggie broth
- let it cook for 10-15 minutes on medium-low heat
- add the vegan sour cream and turn off the heat
- garnish with a few browned mushrooms (brown them in vegan butter separately for 5 minutes per side)

FOR THE VEGAN SOUR CREAM:
Blend everything together in a high-speed blender or mixer. Store in the fridge for up to 5 days.
