How To make Easy Lentil Chili
4 cups lentils
rinsed and picked
:
over 2 cups chopped onions
water 1 can whole tomatoes chopped (16 oz.)
1/4 cup tomato paste
2 tablespoons minced garlic
2 teaspoons salt
2 teaspoons cumin
1 teaspoon freshly ground pepper
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon red pepper flakes
2 tablespoons red wine vinegar
chopped fresh cilantro :
for garnish
1. Combine lentils, onions and 7 cups water in Dutch oven. Bring to boil, red uce heat and simmer, partially covered, 30 minutes.
2. Add 2 more cups water, tomatoes, tomato paste, garlic, salt, cumin, pepper, paprika, thyme and red pepper flakes. Partially cover and cook 45 minutes mor e, stirring every 10 minutes until thick. Stir in vinegar. Sprinkle with chop ped cilantro if desired.
Makes 14 cups.

Nutritional dail y goals: 2,000 (2,500 for men) calories, 60 g fat or less (70 g or less for men ), 20 g saturated fat or less (23 g or less for men), 300 mg cholesterol or les s, 2,400 mg sodium or less, 250 g carbohydrates or more, 55 g to 90 g protein.
Notes: Just toss everything in the pot and cook! This full-bodied chili gets it s kick from plenty of freshly ground pepper. Any leftovers can be reheated

I like to make this at the beginning of the week to have on hand for a healthy lunch or dinner option, especially in this cozy fall weather! And it’s super easy to prep. In the Tone It Up Nutrition Plan, this recipe is made with a slow cooker. If you’re like me and don’t have a slow cooker, I’m showing you how to make it on the stovetop. It’s great to whip up on a Sunday when you’re home doing your meal prep ~ just make sure you keep an eye on it.

How to Make Lentil Chili | Plant Recipes
Easy and budget friendly crockpot lentil chili recipe. This is one of Emma Ryan's favorite recipes that is perfect to make for yourself, your family, or a crowd.
What you will need for this recipe:
1 crockpot, instant pot, slow cooker, etc
1/2 of a yellow onion
1 garlic clove
1 red bell pepper (could be green, yellow, orange, whatever color you want)
1 can of black beans (any bean will work)
1 can of diced tomatoes
1 can of refried black beans
32 ounces of vegetable broth
2 teaspoons of Himalayan salt
1/2 pound of green lentils (could be black or red lentils)
2 tablespoons of chili powder
Optional: green onions, cilantro, avocado (toppings)
Cooking instructions:
Set crockpot on medium heat for 6 hours
End result:
Delicious lentil chili that serves about 6 people. Enjoy!
