How To make Espresso Tuile
1/2 teaspoon salt
1 cup brown sugar
1 cup corn syrup
1 1/4 cups all-purpose flour
6 ounces butter softened
1/2 teaspoon vanilla extract
2/3 cup crushed espresso beans
1 cup chopped pecans
Combine salt, brown sugar and corn syrup in mixer bowl with paddle attachment. Add flour, butter and vanilla extract, mix well. Add espresso beans and pecans. Place the batter in heaping tablespoons on non-stick baking sheet - 3 cookies at a time. Bake in preheated 350 oven 8 - 10 minutes. Watch carefully. Remove cookie sheet from the oven. Peel off, one at a time, from the sheet. Drape over 3 pieces of crumpled shaped parchment paper. Timing here is important. If cookies become too hard before draping, place in oven to soften. Cookies, if too soft, will tear, and if too hard, cookies will crack when removing from the cookie sheet.

Affogato with glassy coffee tuile
Is an affogato a drink or a dessert? Or both? We don't really know, but we love this Italian treat either way. Pure madagascan vanilla ice cream and a shot of espresso, in this case topped with a glassy coffee tuile made using MSK UltraTex, and a touch of dry ice for some theatrics.

Recipe
8oz smoked butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg & 1 Yolk
1/2 Tsp vanilla extract
1 Tbsp Honey
2 1/4 cups whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 bag Espresso Chocolate Chips
Directions
1.In stand mixer with paddle attachment. Cream together butter, brown sugar, and white sugar.
2.Add Eggs, Vanilla, and honey. Mix on high speed till it looks like butter cream
3.Add your flour, baking soda, and salt. Mix until incorporated.
4.Add Espresso Chocolate Chips
5.Portion (I used a blue vollrath potion scoop which is 2 oz). Chill in refrigerator for at least 2 hours
6.Place portions on silicon pad. Bake at 350 for 14 minutes
7.Once they are cool garnish with topping.
Marshmallow Fluff
4 egg whites
1 cup sugar
1/4 tsp cream of tartar
Pinch of salt
Directions
1.In a medium pot add one inch of water. Turn on to medium low heat or a low simmer.
2.Place mixing bowl on top to create a double boiler.
3.Add all of the ingredients
4.Mix until sugar is dissolved and bowl is warm.
5.Turn off the heat and transfer to stand mixer. Use whisk attachment and mix for 5 minutes on high speed.
6.once stiff peaks are formed you can add this to your piping bag.
7.Pipe on cookies then torch.
Smoked Butter
Cinnamon sticks
Smoking gun (portable cold smoker)
8oz cubed butter
1.Cube butter and place in large bowl.
2.Chop up cinnamon stick into small chips.
3.Cover bowl with plastic wrap
4.Place Chips in smoking gun. Place tube in the bowl with butter.
5.Turn on the machine, and light the chips on fire with a small lighter. Pull the tube out and seal the container.
6.Once butter has smoked for 15 minutes it is ready to use.

Parmesan Crisps | Easy Cheese Tuiles | Chef Studio Modernist
Here's a quick tutorial on how to make these super easy parmesan cheese crisps. They look fancy but they're only one ingredient. All you need is grated parmesan. Support the channel and get a Lemon Membership here:
I've found that if you use the inner part of the parmesan as opposed to the harder stuff near the rind you get much better results. I think it has something to do with the moisture in the cheese separating from the fat.
Grate your parm, place in on a silpat lined baking sheet, bake at 400 F (200 C) for 5 minutes. Be careful because these burn easily. You can shape them right out of the oven when they are still pliable or use a cutter to get a super clean shape.
