How To make Espresso Tuile
1/2 teaspoon salt
1 cup brown sugar
1 cup corn syrup
1 1/4 cups all-purpose flour
6 ounces butter softened
1/2 teaspoon vanilla extract
2/3 cup crushed espresso beans
1 cup chopped pecans
Combine salt, brown sugar and corn syrup in mixer bowl with paddle attachment. Add flour, butter and vanilla extract, mix well. Add espresso beans and pecans. Place the batter in heaping tablespoons on non-stick baking sheet - 3 cookies at a time. Bake in preheated 350 oven 8 - 10 minutes. Watch carefully. Remove cookie sheet from the oven. Peel off, one at a time, from the sheet. Drape over 3 pieces of crumpled shaped parchment paper. Timing here is important. If cookies become too hard before draping, place in oven to soften. Cookies, if too soft, will tear, and if too hard, cookies will crack when removing from the cookie sheet.

Affogato with glassy coffee tuile
Is an affogato a drink or a dessert? Or both? We don't really know, but we love this Italian treat either way. Pure madagascan vanilla ice cream and a shot of espresso, in this case topped with a glassy coffee tuile made using MSK UltraTex, and a touch of dry ice for some theatrics.

Laced Coffee Tuiles – Crisp French Wafer Recipe
for 20 tuiles
Ingredients
1/3 cup confectioners’ sugar (42g)
1 tablespoon espresso
1 tablespoon water
3 tablespoons unsalted butter, melted (21g)
3 tablespoons all-purpose flour (23g)
Instructions
1. Preheat oven to 300° F. (150° C.)
2. In a bowl add in water, warm espresso, and warm melted unsalted butter. Mix well. Then stir in confectioners' sugar. Finally sift in all-purpose flour. Whisk until homogeneous. The batter will be very liquidy. Let chill in the refrigerator for one hour.
3. On a silpat, or a greased pan, make disks with a teaspoon of batter. Spread the batter flat with the back of the teaspoon.
4. Bake for 10 to 12 minutes, or until dry and set.
5. Out of oven, immediately transfer the disks to a rolling pin. And press the ends of the wafers to form roof tiles.
