Knowing how to make sour cream can be an important skill if you live in a country where the product is unavailable or differs significantly from the dairy topping you are used to having available. Using either of these two sour cream recipes, you can make sour cream at home. Whether you like your sour cream slathered on Mexican food, potatoes, desserts or fresh fruit, there's no arguing that the dairy condiment has a wide variety of food combinations. Sour cream can be used as a topping for baked potatoes and makes an excellent addition to Mexican dishes or Tex Mex foods such as burritos, tacos, nachos and taquitos. You can also turn sour cream into flavorful sauces, dips and dressings with a few simple recipe variations. With simple substitutions, you can also make your own sour cream non-fat or low-fat.

Meatloaf with Sour Cream and Onion Potatoes
Comfort Food 101: Moist, tender meatloaf and a potato-chip inspired riff on mashed potatoes. A bite doesn't get more comforting than that!

Meatloaf with Sour Cream and Onion Potatoes Dish Guide
Serves 4 with leftovers
For the Meatloaf
2 carrots, grated (about 1/2 cup)
1 bell pepper, diced
1 small/medium yellow onion diced
2 cloves of garlic, minced
2 eggs
1 cup breadcrumbs
2 lbs ground beef, pork and/or veal*
1 T Worcestershire sauce
1 T yellow mustard
2 T ketchup
½ cup milk
Salt and Pepper to taste
1 T olive oil
For the Glaze
¼ cup ketchup
1 T yellow mustard
1 T honey
1 T oyster sauce
Add the oil to a skillet and cook the carrots, pepper and onion for 5-7 minutes over medium heat until softened. Season with salt and pepper. Add the garlic and remove from heat.
In a large bowl beat the eggs and add most of the breadcrumbs, the milk, mustard, ketchup and Worcestershire. Add the meat and cooked veggies and mix by hand to thoroughly combine. If the mixture feels too loose add more breadcrumbs. If it feels too dry add more milk.
Form the meatloaf into a rectangle on a sheet pan and bake at 375 for 30 minutes.
Combine ingredients for glaze and mix thoroughly.
Remove meatloaf from oven and glaze. Continue baking until 160 degrees F in the center.
For the Sour Cream and Onion Potatoes
1.5 lbs of baby red potatoes
½ cup milk
4 green onions, minced
¾ cup sour cream
Salt and Pepper to taste
Halve potatoes and add to a pot of cold, salted water. Bring to a boil and cook for 12-15 minutes or until fork tender. Drain potatoes and add the milk and season with salt and pepper. Use a potato masher or fork to smash potatoes until chunky and the milk has absorbed. Add the sour cream and green onions and continue mashing until creamy yet still chunky.
Slice the meatloaf and plate over a generous helping of the potatoes. Garnish with more green onions and top with extra glaze if desired.
Dish Notes
Use any kind of potatoes you wish - we find red potatoes have a nice waxy texture that holds up well to all that sour cream. We use a meatloaf meat mix from the grocery store but if you can't find that use either a 50/50 mix of ground beef and pork or a a three-way split of beef, pork and veal. Cooking time will vary based on the way you shape the loaf so always use a meat thermometer to check the temperature. You want to glaze it about 15 minutes or so before it's fully cooked.

Sour Cream Beef Bake
1 lb lean ground beef
2 1/2 cups frozen riced cauliflower
1 1/2 Cups Rao's Marinara
1/2 cup chopped scallions
1 3/4 cup shredded low-fat cheese
1 cup 1% lowfat cottage cheese
6 T lowfat sour cream
1/4 t salt
1 t ground black pepper
Preheat over to 350 degrees
Cook frozen, steamable bag of cauliflower rice in microwave for 6 minutes. Once completed, place in cheesecloth to wring out excess moisture.
Brown ground beef in skillet, drain and rinse. Weigh out 10 oz for recipe
In a mixing bowl, stir together the cottage cheese, sour cream, green onions, cauli rice.
Place sour cream mixture in the bottom of a baking dish which has been sprayed with Pam.
In a mixing bowl, stir together the ground beef, marinara, salt & pepper.
Place 1/2 of the beef mixture over the cauliflower rice mixture.
Top w/ 1 cup of shredded cheese.
Layer with remaining meat mixture.
Top with remainder of cheese.
Bake dish in oven for 20-30 minutes.

Meat Balls With Sour Cream
21 ounces of ground meat
17 ounces of sour cream
7 ounces of rice
3 ounces of onion
5 eggs
2 pieces of bread
3 knobs of garlic
1 and a half mixed spices
Oil
Salt
Pepper

The estimated time you’d need to prepare this dish is about 60 minutes
Grate one medium sized onion in a large bowl
Cut a knob of butter into tiny bits
Add the garlic to the bowl
Add the ground meat, salt, and pepper
Add mixed spices, crack one egg and put it in the bowl
Take the bread and by hand divide it into tiny bits
Put it in a bowl with water to soak in
Once it has soaked in all the water, take it out and squeeze the water out of the bread
Add the bread to the bowl
Start mixing the ingredients by hand
Once all the ingredients are all mixed up together nicely, start making meatballs
Crack and mix the remaining 4 eggs
Add sour cream while mixing
In a preheated pan with water add the rice
Start frying the meat balls
Once they’re done put them on a plate
Once the rice has boiled nicely, take out the water
Put the rice in the pan with the in
Start frying the rice in a preheated, oiled up pan
Add mixed spices and mix
Take another pan and spray some oil on the surface
Add the meatballs
Add the rice in between the meatballs
Coat with the eggs and sour cream mixture
Put in oven and let it bake for 20 minutes at 395 F
Serve three pieces of meatballs on a plate
Decorate with red peppers and carrots
Decorate with French parsley as well
