The secret behind this brilliant veggie burger recipe was right in front of us. As Joe Yonan writes, In the ongoing quest for the perfect veggie burger recipe, at a certain point a realization occurs: wasn’t the perfect veggie burger created long ago—in falafel? Yonan swaps out chickpeas for black beans and adds chipotle, cilantro and sweet potato to create a perfectly crisp-on-the-outside, tender-(but not mushy!)-on-the-inside veggie burger. INGREDIENTS
For the falafel burger:
1 cup dried black beans, soaked overnight and drained
1/2 cup chopped white onion
1/2 cup lightly packed chopped cilantro leaves and tender stems
4 garlic cloves, chopped
2 teaspoons kosher salt
2 teaspoons ground chipotle chile (or substitute 2 teaspoons adobo sauce from canned chipotles in adobo)
1 cup mashed, cooked sweet potato (the easiest way is to poke the potato with a fork, microwave till soft, then peel and mash)
grapeseed or other neutral vegetable oil, for frying
8 soft burger buns, such as brioche or potato rolls, (optionally) lightly toasted
1/2 cup Chickpea Aioli (recipe follows) or vegan or traditional mayonnaise
Mustard, ketchup, or both (your choice)
8 leaves romaine or iceberg lettuce
Flesh of 2 ripe avocados, sliced
1 small red onion, thinly sliced
2 tomatoes, sliced
For the chickpea aioli:
1 garlic clove
1/45-ounce can of no-salt-added chickpeas) cups aquafaba (from one 15-ounce can of no-salt-added chickpeas)
2 tablespoons cooked or canned no-salt-added chickpeas
3/4 teaspoon Dijon mustard
1/2 teaspoon kosher salt, plus more to taste
3/4 cup grapeseed or other neutral vegetable oil
1 tablespoon fresh lemon juice, plus more to taste

Easy, simple, tasty. Introducing dinner, without all the falafel. Well, actually, all of it, but you get the idea…
Serves 2
30ml Coconut & Lemon PERi-PERi sauce
400g cooked tinned chickpeas (drained)
20g of plain flour
Small handful of chopped coriander
Small handful of chopped parsley
Prep time: 5 mins
Cook time: 8-10 mins
1 - Finely chop parsley and coriander, then add all ingredients to the food processor.
2 - Blend together all the ingredients, then form into 2 burgers - dust them with some extra flour to ease forming.
3 - Preheat a frying pan to medium-high heat with a drizzle of oil.
4 - Place the burgers in the pan and cook for 8-10 minutes, turning occasionally.
5 - Remove from pan and serve on a mixed salad and drizzle with Coconut & Lemon PERi-PERi - enjoy the new flavour!

1-15 oz can of drained Garbanzo Beans
2 Tbsp Nutritional Yeast
1Tbsp Baking Powder
1tsp Sea Salt
1tsp Cayenne
1tsp Cumin
1/2 cup Flour
2 Tbsp Lemon juice
Tahini Sauce
1/4 cup Tahini
1Tbsp Lemon juice
1 Tbsp Dill weed
1/2 tsp SeaSalt
1/2 tsp Crushed Red Pepper
1/4 cup Coconut Milk
Toppings
Green leaf lettuce
Tomato
Cucumber
Makes 3 large Burgers

Makes 2 Servings

No-salt canned garbanzo beans
2 cups
Olive oil
1/4 cup
Lemon
1/2
Salt
1/2 tsp
Onion
1/2
Cumin
1 tsp
Garlic
2 cloves
Baking powder
1 tsp
Coriander
1/2 tsp
Cilantro
1/3 cup + 2 tsps
Ground Cardamom
2 pinches
Fresh parsley
1/3 cup + 2 tsps
Optional
Bread (whole-grain or gluten-free)

Directions
If using dried chickpeas, place them in a large bowl. Cover with at least 1 cup of water. Allow to soak for 18-24 hours. Drain well. If using canned, skip this step.
Place the chickpeas and the remaining falafel ingredients (except olive oil and lemon) into a food processor. Grind until the mixture begins to hold together, scraping down the sides of the bowl occasionally.
Take a handful of the mixture and form a ball. If the mixture holds together, it’s ready to be formed. If it doesn’t hold together, grind it further. Don’t add water, as this will make the dough too wet and it won’t hold together.
Form the falafel into ¼ -inch-thick patties.
Heat a medium skillet over high heat. When the skillet is hot, add enough oil to generously coat the pan and create a thin layer.
When the oil is hot, gently add the falafel patties to the skillet. Cook for a total of around 4 minutes, 2 minutes on each side or until browned. Remove to a paper towel-lined plate to cool.
Serve in a sandwich or on top of a sturdy salad with a squeeze of lemon.

For Chickpea burger patties recipe
400g tin precooked chickpea cook 5 mins each side under a low heat
1 small red onion
2 cloves crushed Garlic
1 tsp ground cumin
1 tsp ground coriander
1/2 or to taste chilli powder
1 tsp smoked paprika
1/2 juice lemon
salt
pepper
1/2 tsp oil for frying don't use too much oil otherwise they fall apart
25g walnuts or nuts of choice
25g plain flour
1 tsp dried parsley
for yogurt mint sauce
2 tbps finely chopped mint
4 tbps plain yogurt
