How To make Fast Dish Catfish
4 Catfish fillets
1 tb Butter or margarine; melted
2 tb Lemon juice; divided
1 ts Dill weed; divided
1/2 ts Salt
1 sm Zucchini; cut into
-- ribbon-like strips* 1 Carrot; cut into
-- ribbon-like strips* 1 tb Mayonnaise
1 pk Rice pilaf mix
(4.3 to 7.2 oz.) :
prepared according to -- package directions Brush catfish with butter and sprinkle with 1 tablespoon lemon juice, 1/2 teaspoon dill weed, and salt. Broil fillets 8 to 10 minutes or until fish flakes easily with fork. Stir zucchini, carrot, mayonnaise, remaining 1 tablespoon lemon juice, and remaining 1/2 teaspoon dill weed into hot rice. Cover and let stand 5 minutes. Serve vegetable rice with broiled catfish. *To make ribbon-like strips, hold vegetable vertically and cut thin strips using vegetable peeler. 1 tbsp Paprika
1 tbsp Black Pepper
1 tbsp Garlic Powder
1 tbsp Onion Powder
1 tsp Cayenne Pepper (optional)
Cajun Tartar Sauce:
1 cup Mayo
1 tbsp Dill Relish
1/4 - 1/3 Red Onion, finely diced (optional)
1 tsp Red Wine Vinegar
1 tsp Creole Kick or your favorite creole seasoning
1/tsp Sugar
1 tsp Dill Weed

*Griffin Fish/Shrimp Fry Batter:
2 Cups AP Flour
2 Cups Corn Flour
2 Cups Yellow Corn Meal
1 Cup Corn Starch
2 TBSP Paprika
6 TBSP Old Bay Seasoning
1 TBSP Seasoning Salt
1 TBSP Accent
This mixture is enough to make 16 lbs of fish. It can be divided and put into the refrigerator for several months as long as it is sealed.
In the video I used 1 1/2 cups of this fish fry batter to fry 3 lbs of catfish.
