How To make Fiesta Meat Balls Piquante
1 lb Lean ground beef
1 md Onion; minced and divided
3 Garlic cloves
-- minced and divided 2 tb Chopped cilantro; divided
1 tb Paprika
1 ts Salt
1/2 ts Ground black pepper
2 Eggs; slightly beaten
3/4 c Uncooked rice
Vegetable cooking spray 30 oz Tomato sauce
1 c Beef broth
2 Chipotle peppers, pickled
1 tb Chili powder
Combine beef, 2 tablespoons onion, 1 clove garlic, 1 tablespoon cilantro, paprika, salt, pepper, eggs, and rice. Mix well and shape into 1-1/2-inch meat balls. Place in large baking dish coated with cooking spray. Combine tomato sauce, broth, remaining onion, peppers, chili powder, and remaining garlic in blender jar. Cover and process until smooth. Place tomato sauce in large skillet; cook over medium-high heat, stirring constantly 3 to 5 minutes. Pour sauce over meat balls and bake covered at 350 degrees 1 hour or until rice is tender. Sprinkle with remaining

1 large onion peeled, cored and minced

1 large egg lightly beaten

Ingredients Needed for Meatballs: (I used 2 pounds of Ground Chuck so all amounts below are indicative of that. If you'd like to make one pound, just cut in half.)
- 2 lbs. of Ground Chuck or Beef (80/20)
- 4 eggs
- 2 cups of breadcrumbs (you can use flavored if you desire, I used Italian flavored here)
- 2 teaspoons of salt
- 2 teaspoons of black pepper
- 1.5 teaspoons of garlic powder
- 3 teaspoons of dried oregano
- 1 teaspoon dried basil
- 1 cup parmesan cheese
- 1.5 oz of El Yucateco Black Reserve sauce!
Ingredients needed for Marinara Sauce (in slow cooker):
- 70 oz of crushed tomato (canned)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon oregano
- 1/2 teaspoon dried basil
- 1/4 cup fresh minced garlic
- 1.5 oz of El Yucateco Red!
Instructions:
Always wash your hands before prepping any food recipe!
Start by spraying your slow cooker with non-stick spray to assure easy cleanup. Set the slow cooker to the low setting and place the tomato sauce with flavoring ingredients into the slow cooker (reserve a small amount to cover the meatballs after they are all in the slow cooker). Mix the sauce well and cover the slow cooker with lid to allow it to heat.
Prepare the meatballs by combining all ingredients in a large bowl and mixing well until combined. Begin forming meatballs approximately golf ball size or less by rolling in your hands as shown in video. Don't be too worried about the size and always error on the smaller side if you're concerned. Once you've formed and placed all the meatballs in the slow cooker, cover with remaining tomato sauce, then cover the slow cooker and allow to cook on the low setting for approximately 3-4 hours or until done to a safe temperature. Be sure to stir once or twice during the cook after the meatballs have firmed up. Now SERVE AND ENJOY! I recommend garnishing with some dried parsley and fresh parmesan cheese!

Saucy Mexican Meatballs Appetizer Recipe
Watch as Better Homes and Gardens shows you how to make meatballs with a Mexican flair for your next party! Everything you love about meatballs is given a southern spin here. You can serve up these Mexican appetizers with little slices of bread to dip into the flavorful sauce. Before you dive into making meatballs, preheat your oven to 350 degrees. In a large bowl, pour in 1/2 cup of Masa Harina and 1/4 cup of warm water. Masa Harina is just a corn-based flour you can use to create authentic Mexican cuisine for these homemade meatballs. Stir these ingredients together and add to them 1 pound of lean ground pork, 1 pound of lean ground beef, 1 beaten egg, four cloves of minced garlic, 1-1/2 teaspoons of salt, and 1/2 teaspoon of freshly ground black pepper. Use your hands to mix everything together well and begin forming them into 1-inch cocktail meatballs, using your palms to roll them together. This meatball appetizer recipe should create between six to eight dozen meatballs. Place them on a 15 x 10 x 1-inch baking pan and bake for 20 to 25 minutes. While the party meatballs are browning to perfection, let's get started on the sauce. In a food processor, pour in a 28-ounce can of whole tomatoes, juice and all, along with three drained Chipotle chili peppers in adobo sauce. Puree the peppers and tomatoes together, pressing it through a sieve over a small bowl once they're pureed to remove the tough skins. Pour 1 tablespoon of cooking oil into a Dutch oven over medium heat. Once the oil is heated, add to the Dutch oven 1/2 cup of finely chopped onions and two cloves of minced garlic. Cook until the onion is tender and add the meatball sauce, 1-1/2 teaspoons of instant chicken bouillon granules, and 1 teaspoon of ground cumin. Bring the sauce to a boil then reduce the heat to medium and let simmer uncovered for ten minutes. Add the meatballs to the Dutch oven to coat them and give them one last layer of flavor. This recipe for meatballs makes a large batch, making them perfect party appetizers to give your get together a bit of a fiesta flair!
