How To make Fool Medames (Egyptian Beans)
1 lb Dried sm. fava or pink beans
Lightly salted water 1/2 c Red lentils
3 tb Lemon juice
1/4 c Olive oil
1/2 ts Cumin, ground
Salt and pepper to taste 1/2 c Green onions, chopped
Sort and rinse dried beans. Place in a large saucepan and add lightly salted water to cover. Bring to a boil. Reduce heat and cover. Simmer over low heat 2 1/2 hours. If necessary, add more water to keep beans covered. Add lentils and cover. Simmer 30 minutes longer or until lentils and beans are tender and mixture is thick but not soupy. Stir in lemon juice, olive oil, cumin, salt and freshly ground pepper. Serve hot, sprinkling each serving with a portion of green onions. *The Egyptian national dish is eaten for breakfast or any time of day with green onions and bread. Fava beans are one the most famous street food in Egypt usually served for breakfast more than any other meal. I am sharing with you the fastest and easiest way to make a delicious pureed fava beans with tahini and olive oil. You can have it as a dip or in a sandwich (pita bread) they are both as good.
Ingredients:
2 cans of plain fava beans (400 g per can)
Very small onion, quartered
1 small tomato
2 garlic cloves
Approximately 1/2 liters of water
3 tablespoon tahini
3 tablespoon labneh or sour cream
2 tablespoon lemon juice
1 garlic clove
3 tablespoon olive oil + more to drizzle on top
3/4 teaspoon salt or to taste
1/2 teaspoon cumin
1/8-1/4 teaspoon cayenne

Our heads were into other things hence we couldn’t release this in time for Ramadan. Ful Medames is an Egyptian staple we ate for breakfast, every single day during our time in Egypt. Some of the recipes of Ful made in smaller batches were good and the others, particularly the ones we ate in our cruise ship are not worth mentioning. Anyway, here is our take on the ancient Egyptian classic. In Indian cooking, cumin is commonly used as a sidekick for coriander. Mostly in the 1:2 ratio, whereas the Egyptians go the other way. Nevertheless, both these cuisines are unique and their techniques produce great results. By the way, Ful is popularly known as fava beans or broad beans in the English speaking world. Our recipe of Ful Medames will yield 4 servings, with 199 kilocalories in each.

Ful Medames / Traditional Egyptian Cuisine
Ful Medames, a traditional staple food of Egypt is very popular as a vegan dish throughout the Middle-East too. It's prepared with hearty, creamy Fava beans and loaded with flavour with ground cumin and fresh herbs & served with warm pita bread that's just so fulfilling. Fava beans are packed with vitamins, minerals, fibre & protein that improve motor function & immunity. Here, I have garnished this delightful Fava stew with freshly chopped onion, garlic, green chilly, tomatoes and parsley. Try it. Iam sure you will Love it.
Ingredients
Fava beans/Broad beans 400gm
1 1/2 tbsp mustard oil
3 to 4 garlic pieces
1 medium onion chopped
1 medium tomato chopped
2 green chilly
Spice powders
1/2 tsp turmeric
1 tsp Chilly powder
1 tbsp cumin powder
Salt to taste
1/2 tsp sugar
Coriander /parsley
Method
Wash & Soak Fava beans for 4 to 5 hours. Boil and mash well. Heat mustard oil in a pan. Saute chopped garlic until golden brown. Add in chopped onion, green chilly and saute until translucent. Add in chopped tomatoes and cook until mushy. Add salt and sugar and mix. Add in the mashed beans and cook for a min. Add all spice powders and cook until raw smell dissapears. Add in the coriande/parsley and cook until done. Serve hot with pita bread and garnish with onion, garlic, ????, green ????, coriander /parsley. Enjoy...

Lebanese Foul Recipe (Fava Beans)
Ingredients:
.2 tomatoes
.1 bunch of parsley
.1 onion
.3 cans of fava beans
.2 cans of chickpeas
.3 garlic cloves
.juice of 4-5 lemons
.1 teaspoon of salt
.½ teaspoon of cumin
1) Prepare to boil the fava beans and chickpeas while you cut up the veggies.
2) Chop up your tomatoes, parsley, and onion, add to a plate, and set aside.
3) In a large bowl, crush up your garlic cloves, and once the fava beans and chickpeas are done boiling, add them with the garlic while mashing.
4) Add your lemon juice, salt, and cumin. Mix until well incorporated, serve them with the vegetables. Enjoy ????

How to cook fava beans “Ful Medames”
Ful is one the famous breakfast meals in Egypt and the middles east. Ful stalls are usually found on the side of every road in Egypt. Today, I am showing you how to properly cook dried fava beans to end up with a very soft and perfectly cooked beans. The cooked beans can then be served in many ways. Ingredients:
400 grams dried fava beans
1/4 cup red lentils
6 garlic cloves
1 medium tomato (2 small)
2 tablespoon vinegar (or amount enough to cover surface)
Tips:
Beans should be submerged with water all the time.
Low simmer should be maintained at all times.
You can store cooked beans in fridge for up to 5 days or in the freezer.
