How To make French Market Doughnuts
1 pk Active dry yeast
1 1/2 c Warm water -- 105 deg.
1/2 c Sugar
1 t Salt
2 Eggs
1 c Evaporated milk, undiluted
7 c All-purpose flour
1/4 c Shortening
softened
Oil :
for frying Powdered sugar
In large bowl, sprinkle yeast over water; stir to dissolve. Add sugar, salt, eggs and milk. Blend with beater. Add 4 cups of the flour, beat smooth. Add shortening; beat in remaining flour. cover with plastic wrap and chill overnight. Roll out on floured board to 1/8" thickness. Cut into 2 1/2" squares. Deep fry at 360F 2-3 minutes until lightly browned on each side. Drain on paper towels and sprinkle heavily with powdered sugar. Serve hot with cafe au lait. Note: this dough can be kept for up to a week in refrigerator and actually improves with age; just punch down when it rises. Dough can also be frozen; simply thaw, cut and roll, or shape donuts before freezing. Tastes like the original!

Cafe Du Monde is one of the places you cannot afford to miss whenever you visit New Orleans! It's a very famous cafe where everyone comes and tries their insanely good beignets that come with a sugar-powered plus a delicious french coffee!
History:
The Original Cafe Du Monde Coffee Stand was established in 1862 in the New Orleans French Market. The Cafe is open 24 hours a day, seven days a week. It closes only on Christmas Day and on the day an occasional Hurricane passes too close to New Orleans.
The Original Cafe Du Monde is a traditional coffee shop. Its menu consists of dark roasted Coffee and Chicory, Beignets, White and Chocolate Milk, and fresh squeezed Orange Juice. The coffee is served Black or Au Lait. Au Lait means that it is mixed half and half with hot milk. Beignets are square French-style doughnuts, lavishly covered with powdered sugar. In 1988 Iced Coffee was introduced to the cafe. Soft drinks also made their debut that year.

We made some festive beignets using Cafe Du Monte beignet mix we got from World Market the other day for our Vlogmas. Beignets are little French donuts which are Joshua's most recent favorite. He's been requesting for it since this morning, so I thought why not make this us our Vlogmas #4.

BEIGNETS: How to make delicious New Orleans style Beignets/French donuts.
Servings 24 beignets
Ingredients
* 3/4 cup warm water (room temperature)
* 1/2 cup granulated sugar
* 2 1/4 teaspoons active dry yeast (1 envelope)
* 1 large egg room temperature
* 1/2 cup milk room temperature
* 2 teaspoons vanilla extract
* 3 3/4 cups All Purpose flour
* 1 teaspoon salt
* 3 tablespoons unsalted butter at room temperature
* vegetable oil for deep frying or avocado oil
* 1/2 cup powdered sugar
Instructions
* Add the warm water to the bowl. Add the yeast and 4 teaspoon sugar then set aside for about 15 minutes for the yeast to get activated.
* Measure out 3 ¾ cups of flour and set aside.
* In a separate bowl pour in the milk, vanilla, remaining sugar, and add the egg. Whisk together then add the yeast mixture and one cup of the flour and whisk together until smooth.
* Attach the dough hook and continue mixing on medium speed with Kitchenaid Mixer, once the dough comes together add the butter and salt keep mixing until the dough is smooth and will pull away from the bowl.
* Cover and allow to rise in a warm place for at least two hours, you can also store the dough in the refrigerator for up to 48 hours.
* Add oil to a large pot and place over medium-high heat. Cover a wire cooling rack with a few layers of paper towels.
* Once risen, roll the dough into a 1/4 inch thick rectangle on a well floured surface. Cut into 2½ inch squares.
* Fry until the bottom is puffed and golden, flip over and remove with a spider or slotted spoon once the bottom is golden.
* Place onto the paper towels then dust with powdered sugar and enjoy!
*Serve it while it is hot.
