【Ingredients】
- egg yolks 2
- eggs 2
- lemon juice 100ml
- rum 10ml
- lemon zest 2 tbsp
- granulated sugar 140g
- unsalted butter 140g
【Steps】
1. Add egg yolks and eggs to a bowl and whisk. Add in rum, granulated sugar, lemon juice and lemon zest. Combine well.
2. Place the bowl over a saucepan with simmering water, making sure the water does not touch the bottom of the bowl. Whisk the mixture over simmering water to ensure that it doesn’t curdle.
3. Whisk until the lemon curd is thickened by around 80%. Remove from the heat.
4. Add unsalted butter in 3 batches, whisking after each addition (do not stop whisking at any point!). Only add the next batch of butter once the previous batch has been completely melted.
5. Enjoy on bread or scones!
