Pasta with calamari in tomato sauce
In this recipe, I will show you how to prepare the calamari in tomato sauce.
Cleaning the calamari takes some time, but it's doable. The flavour of this sauce is unique. Also, I used cicatelli, the homemade pasta made in the previous video.
The ingredients are:
- calamari 500 g
- cherry tomatoes 250 g
- white wine 50 ml
- garlic
- parsley

Calamari in Tomato Sauce (Calamari Pomodoro) ~ Panamei Seafood's Feast of the Seven Fishes

Calamari In Tomato Sauce
Calamari Pomodoro

Ingredients:
2lb Panamei Squid Rings (Calamari), thawed
½ cup Olive Oil
1 Large Onion, finely chopped
5 Garlic Cloves, lightly crushed
4 Tbsp Tomato Paste
1 Can (14oz) Tomatoes, peeled, and crushed
2 Dry Bay Leaves
6 Fresh Basil leaves, roughly chopped
1 tsp Italian Seasoning
½ Tbsp Sugar
Salt and Pepper, to taste
1 cup White or Sherry Wine
Fresh Parsley, chopped
Instructions:
In a deep pan, heat oil to medium and sauté the onion for about 1 minute; add the garlic and mix well. Add the Italian seasoning, the bay leaves, and the tomato paste (diluted with a Tbsp water). Continue cooking and constantly stirring.
Stir in the crushed tomatoes, sugar, basil, and ½ cup wine; season with salt and pepper and cook in medium-low heat for about 12-15 minutes.
Add the rest of the wine and the Squid Rings (Calamari); cook for 3 minutes and then remove the calamari from the sauce with a slotted spoon, set aside.
Adjust seasoning if needed and continue cooking until it thickens.
Serve the Calamari mixed with the sauce in a large bowl —family style— Garnish with chopped parsley.
Tip: Enjoy this sauce over pasta or with a side of bread. Buon Appetito!

Disclaimer: My recipes may not be the original, classic or the authentic ones. I use whichever ingredient is handy and available in our pantry. Most of the time, i use ingredients that serve as an alternative but nearest to its flavor. Sometimes i lack one or more ingredient from the original and sometimes i recreate and introduce new flavors to a dish.
CALAMARI, BASIL AND TOMATOES PASTA
Ingredients:
Spaghetti Pasta, 450g, cooked accdg to packet instructions
Calamari/ Squid, half kg
Tomatoes
Sweet Basil
Margarine/ Butter
Olive Oil
Garlic, minced
White Onion, chopped
Salt
Ground Black Pepper
Thyme
Dried Basil Leaves (optional)
Lemon-Lime Soda (Sprite)
Fresh Basil, for garnishing

15-minute Cherry Tomato Pasta
1 lb pasta of choice
3-4 garlic cloves, thinly sliced
¼ cup extra virgin olive oil
2 pints cherry tomatoes
6-7 leaves fresh basil, thinly sliced
1 tsp black pepper
Salt to taste
¼ cup fresh parmesan cheese (add more if you like)
Pasta water as needed
Bring a large pot of water to a boil seasoned with salt.
In a large skillet pour the olive oil and add in the thinly sliced garlic.
Turn the heat to medium heat and let the garlic infuse with the oil until golden brown, this should take about 3-4 minutes.
At this point you can cook the pasta when water is at a boil, so it will be ready at the same time as the sauce. Cook the pasta shy 2 minutes of al dente as per package directions.
Add in the whole cherry tomatoes and stir them around until they soften and start to burst. You can use a wooden spoon to help with this until it reaches a saucy consistency, this takes about 7-8 minutes.
Add in fresh basil. Season with pepper and salt.
Drain pasta (but reserve the water) and add it in to the skillet. Pour in about ½ cup of the pasta water and stir.
Keep stirring the pasta around the skillet for about 2 minutes.
Adjust for seasoning and pasta water, and add parmesan cheese as you like.
