Mixed Berry Pie Recipe | Perfect for Summer! | with Homemade Pie Crust

One of my favorite summertime desserts! This incredible mixed berry pie recipe is easy to make and perfect for a special occasion or a simple backyard dinner! I make it with my Homemade Pie Crust recipe and fill the inside with blueberries, blackberries and raspberries! The berry filling has just the right amount of sweetness and hint of orange flavor from orange zest. I love to enjoy this pie a la mode with a scoop of vanilla ice cream on top!
Homemade Pie Crust Video:
INGREDIENTS:
For Pie Crust:
2 2/3 cup (334 g) all-purpose flour
1/3 tsp salt
1 cup plus 2 tbsp (255 g) unsalted butter
¼ cup, plus 2 tbsp (90 ml) ice cold water
For Berry Pie:
3 cups (570 g) blueberries
3 cups (375 g) raspberries
2 cups (288 g) blackberries
¾ cup (150 g) white granulated sugar
¼ cup (30 g) cornstarch
¼ cup (31 g) all-purpose flour
1 tsp vanilla extract
1 tbsp (15 ml) lemon juice
Zest from 1 large orange
1 beaten egg, for egg wash

RASPBERRY LATTICE PIE BAKING
Hey guys! In this video I made a pie for the first time. One of my favorite berries are raspberries, so I used them in this and the pie turned out amazing! The crust was really buttery and thick and held up like a store bought pie crust. In the inside was the raspberry filling which also turned out great.
With the top layer of crust, the pieces kept on falling apart, so I had to work fast and patch it together and get it in the oven. When it is cooked you should refrigerate it before cutting into it, because I didn't, and it fell apart. The second piece was cut after being refrigerated and held up much better. The crust had a better texture after being refrigerated as well, because it wasn't soggy.
Notes - I forgot to add the measurement of the pie pan. The pan had a diameter of 11in.

2 TBSP cornstarch
Bake at 350 degrees for 55 minutes. LET COOL! Enjoy. :)

Blackberry Raspberry Pie: the Best Pie Recipe for Summer
This is one of the best summer desserts! Raspberries and blackberries are sweet, tart, and tasty. If you want to make this for Thanksgiving, frozen berries work great!

ingredients:
2 prepared pie crusts (1 top, 1 bottom)
3 1/2 cups blackberries
3 1/2 cups raspberries
1 cup sugar (more according to taste)
2 1/2 tablespoons lemon juice
2 tablespoons cornstarch
milk and coarse sugar for topping the crust
instructions:
1. Prepare a pie plate with a pie crust. Place on a foil lined baking sheet. Preheat oven to 400 degrees.
2. Combine the berries and sugar in a large saucepan. Cook over medium heat until berries release their juices, about 5 minutes. Taste the filling and add more sugar if desired.
3. While the filling is heating, mix the cornstarch and lemon juice in a small bowl. Add it to the berry mixture and heat for 2-3 minutes more.
4. Pour filling into prepared pie dish and top with second crust. Brush with milk and sprinkle with sugar.
5. Bake at for 40-45 minutes, until pie is golden brown and filling is bubbling. If edges are overbrowning, cover them with a foil guard halfway through the baking time.
6. Allow pie to cool to room temperature on cooling rack, then cover and refrigerator for 4-24 hours.
7. Serve cold or room temperature.

Frozen berries work very well for this.
Vanilla ice cream is the perfect complement.

CLASSIC RASPBERRY PIE
Ingredients
For the crust:
* 3 cups all purpose flour
* 2 tablespoons granulated sugar
* 1 teaspoon salt
* 1 cup cold unsalted butter, cut into small chunks
* 1 teaspoon lemon juice
* 6-7 tablespoons ice cold water
For the filling
* 6 cups fresh raspberries (or use frozen raspberries)
* 5 tablespoons cornstarch
* 1 cup granulated sugar
* 1 pinch salt
* 3 tablespoons lemon juice
For finishing:
* 1 egg
* 1 tablespoon water
* 1-2 tablespoons coarse sugar
Instructions
For the crust:
* Add the flour, sugar and salt to the bowl of your food processor (or a large bowl if your making the dough by hand).
* Turn the food processor on low speed and add the chunks of cold butter one at a time while the food processor runs until all the butter is added and the mixture resembles coarse crumbs.If making by hand, use a pastry blender or your hands to work the butter into the dough until the mixture is crumbly. Try not to handle the butter too much (the heat from your hands will soften it) - use quick movements and don't worry if some larger chunks of butter still remain.
* Add the lemon juice and the water slowly as the food processor runs on low, just until the dough comes together and pulls away from the sides of the bowl. Depending on the weather and even on the brand of flour, I use anywhere between 5 and 8 tablespoons of water.If making by hand, use your hands to form the dough gently and quickly using just enough water for the dough to come together.
* Dump the rough dough onto the counter and divide the dough into two disc shapes and wrap each one separately in plastic wrap, placing it in the fridge to chill for 45 minutes or overnight.
For the filling:
* Add the raspberries to a bowl, along with the cornstarch, sugar, salt and lemon juice. Toss just until combined. If using frozen raspberries, make the filling with the raspberries as they're frozen (do not defrost the raspberries first).
* Set the filling aside while you prepare the crust for baking.
