At its most basic, cooking means applying heat to food. Whether the food is baked, fried, sautéed, boiled, or grilled, it's all cooking.
People still cook some foods over an open flame, in addition to using tools like microwaves toasters, and stovetops.

Betty's Fried Country Ham Steaks with Redeye Gravy -- KY Derby, 2016
Country Ham steaks available from: Browning’s Country Ham, Dry Ridge, KY:
or
Betty demonstrates how to make Fried Country Ham Steaks with Redeye Gravy for Derby Day (May 7, 2016). This is the beginning of a wonderful Kentucky Derby breakfast (or dinner)!
Fried Country Ham Steaks with Redeye Gravy
1 tablespoon butter
1 tablespoon olive oil
three 8-ounce country ham steaks
1 ½ cups hot, strong brewed coffee
¼ cup light brown sugar, firmly packed
Melt butter with olive oil in a large, heavy skillet over medium heat. Add ham steaks in a single layer. Cook 5 minutes on each side, or until browned. Transfer cooked ham from skillet to a large serving platter. Leave drippings in skillet. To make Redeye Gravy, add coffee and brown sugar to drippings in skillet. Stir to loosen ham particles from bottom and sides of skillet. Bring mixture to a boil. Boil, stirring occasionally, until reduced by half, about 15 minutes. Pour Redeye Gravy into serving bowl and serve with Fried Country Ham Steak. Enjoy! Happy Derby Day! --Betty :)
