How To make Friendship Cake Amish
1 c Butter/Margarine, Melted
1 3/4 c Sugar
3 c Unbleached All-purpose Flour
1 ts Baking Soda
1 ts Ground Cinnamon
1/2 ts Salt
1/4 ts Ground Cloves
1/4 ts Ground Nutmeg
2 Large Eggs
2 c Brandied Fruit
1 c Chopped Pecans
1/4 c Brandied Fruit Juice
brANDED FRUIT STARTER:
15 1/2 oz (1 Cn) Pineapple Chunks
16 oz (1 cn) Sliced Peaches
17 oz (1 cn) Apricot Halves
10 oz (1 jr) Maraschino
1 1/4 c Sugar
1 1/4 c Brandy (Any Brand)
Combine butter and sugar in large mixing bowl. Beat well. Combine next 6 ingredients. Beat well. Add eggs. Coarse chop brandied fruit and stir into batter. Add pecans and juice. Mix well. Pour batter into well-greased 10 inch bundt pan. Bake at 350 degree F. oven for 1 hour. Cool in pan 10 minutes, then remove from pan. brANDIED FRUIT STARTER: Drain all canned fruit. Combine all ingredients in clean, nonmettalic bowl. Stir gently. Cover and let stand at room temperature for 3 weeks, stirring twice per week. As you use it, replace the amount taken with 1 cup sugar. Cover and let stand at room temperature 3 days before using again. Yields 6 cups of brandied fruit. Amish Friendship Bread ~ Full Recipe plus Starter!

Use plastic or wooden utensils! Never Metal for this recipe!
Starter:
Mix together:
2 1/4 tsp active dry yeast
2 TBS warm water
Let sit for about 10 minutes until bubbles form on the top.
Mix together:
1 cup flour
1 cup sugar
1 cup milk
Add the yeast and stir. Leave out on your counter or somewhere where you will remember to do the rest of the steps. Do not store in refrigerator!!
Day 1: The day you make the starter. If you already have the starter do nothing but consider it day 1.
Day 2: Do nothing!
Day 3: Stir
Day 4: Do nothing!
Day 5: Do nothing!
Day 6: Add 1 cup flour, 1 cup sugar, 1 cup milk. Stir.
Day 7: Do nothing!
Day 8: Stir
Day 9: Do nothing!
Day 10: Baking day!!
Separate the mixture into 3 bowls. You should have approximately 1 cup in each bowl.
Set two of them aside to either use for your next batches of bread or give to a friend with the recipe!!
In a large bowl combine:
One of the cups of starter
1 cup vegetable oil
1/2 cup milk
3 eggs (beaten)
1 tsp vanilla extract
Stir these ingredients together and set aside.
In a smaller bowl combine dry ingredients:
1 cup flour
1 cup sugar
1 1/2 tsp baking powder
1 TBS cinnamon
1/2 tsp salt
1/2 tsp baking powder
Two packages of 3.4 oz instant vanilla pudding (or 1 large package)
Add dry ingredients to wet ingredients in thirds, mixing between additions.
Grease 2 large loaf pans. Split the batter between the two pans and sprinkle the top with a mixture of 1 TBS sugar and a few shakes of cinnamon.
Bake in a preheated 325 degree oven for 1 hour. (I start checking at 50 minutes. When a toothpick inserted in the center comes out clean the bread is done!)

How to start the 30 Day Friendship Cake
Come join me in making this 30 Day Friendship Cake. Get your canned fruit and get started. We will bake the cake on New Years Eve.
DO NOT REFRIGERATE FRUIT! LET SIT ON COUNTER IN KITCHEN. MAKE SURE LID IS NOT TIGHT.
Recipe:
1 large (gallon size) glass jar with loose fitting lid
Beginning with no starter
2 1/2 cups sugar
1 large can 20-28 oz of sliced peaches
Stir and continue to stir once everyday for 10 days.
On 10th day, add 2 1/2 cups of sugar
1 large can 20 oz of pineapple and the juice ( tidbit size or crushed)
stir once daily for the next 9 days
On 20th day, add 2 1/2 cups of sugar
1 or 2 cans of maraschino cherries and juice
stir on daily for the next 9 days
On the 30 day you are ready to bake the cake:
1/3 of fruit
1 box yellow cake mix
1/2 cup to 1 cup pecans
1 cup coconut
1 small box of instant vanilla pudding
