Drunken Beans (FRIJOLES BORRACHOS) - How to make Drunken Beans
Frijoles borrachos, also known as drunken beans or frijoles borrachos, is a traditional dish of both Mexican and Southern Texas cuisines made of pinto beans cooked in beer and flavored with cilantro, onion, garlic, bacon, bacon fat, cumin, and chili powder or whole chili peppers.
The name borracho means drunk in Spanish, and the beans get their name from the fact that they are cooked in beer. However, the alcohol in the beer cooks off during the cooking process, so the beans will not actually make you drunk.
Frijoles borrachos are a hearty and flavorful dish that is perfect for a cold winter day. They can be served as a side dish or as a main course.

Borracho Beans AKA Drunk Beans
Borracho beans, or frijoles borrachos are flavorful, savory, and the perfect Tex Mex side dish! Pinto beans cooked up with bacon, onion and garlic all simmered in a dark beer broth for even more flavor.

Ingredients:
1 lb pinto beans , notes below on using canned beans
8 cups water
2 bayleaves
5 slices bacon, uncooked
1 jalapeno, seeds & membranes removed, diced
½ cup onion , diced
4 cloves garlic , minced
12 ounces beer, Shiner Bock or Negra Modelo
1 tsp salt
1 tsp ground cumin
1 tsp chili powder
1 tsp dried oregano
1 (14 ounce can) diced tomatoes
0:00 Intro
0:10 Soak Beans
0:23 Cook Beans, set aside, reserve the bean broth
0:37 Cook bacon, remove, reserving grease
0:51 Saute veggies
1:02 Add beans back in with reserved bean broth
1:05 Add remaining ingredients
1:16 Bring to a simmer
1:21 Stir in cooked bacon and cilantro
1:26 Serve

Borracho Beans
This is a super easy and delicious side dish.
The beans are stewed with dark bear for a rich flavor.
You can make pinto beans or just use a ready canned product as well.
Recipe:
Ingredients:
2 lbs cooked or 2-15 oz cans of pinto beans
1 cup- diced bacon
1 cup- diced onion
1 cup- diced tomato
1 each- 6 oz can roared chilis
1/2 cup- chopped cilantro
1 TBSP- chopped garlic
1 cup- chicken broth
1 tsp- salt
1 tsp- cumin
1 tsp- oregano
1 tsp- paprika
1 tsp- chili powder
1 tsp- black pepper
1 each- bottle dark beer
Method:
Saute bacon and onions over med heat until the bacon begins to brown.
Add tomatoes and roasted chilis, saute for 3-4 minutes.
Add salt, cumin, oregano, paprika, chilli powder and pepper. Stir to combine.
Add garlic and chicken stock. Stir to combine.
Add the dark beer and pinto beans.
When he mixture starts to boil, reduce heat to simmer and add the cilantro.
Cover and stew on simmer for 45 minutes.
Your final dish should have a rich broth.
We like to garnish with cotija cheese and cilantro.

Frijoles charros recipe
Servings: 8-10
Cook the beans
1 lb pinto beans
1/2 medium white onion
6 garlic cloves, peeled
12 cups of water
2 tsp of kosher salt
Bean paste
1 cup of the cooked beans
1 cup of the bean broth
1/2 cup water (to get the last of the paste from blender)
Meat prep
6 oz ham (5 slices)
5 bacon strips
4 beef franks
12 oz pork or beef chorizo
Vegetable prep
3 garlic cloves, minced
10 oz roma tomatoes, diced
1/2 medium white onion
1 serrano or jalapeño pepper (optional)

Instant Pinto beans
2 cups pinto beans
6 cups water
1/2 Tbsp salt
Optional- 1/2 onion + 2 garlic cloves
Pressure cook 40 minutes-let cook in pressure and extra 20 minutes- release steam- Boom Done!
Boracho Beans
2 cups cooked beans + 2 cups bean broth or 2 cups water
1 beer of choice
6 to 8 pieces of chopped bacon (hot dogs or thick ham)
1/2 chopped medium onion
2 ripe juicy chopped tomatoes
3 minced garlic cloves
1 chopped Jalapeño or pepper of choice
1 1/2 Tbsp tomato chicken bouillon or salt to taste
1/2 Tbsp brown sugar
1/2 Tbs Mexican Oregano (add last)
1 1/2 tsp ground cumin
-Saute bacon for 3 mins- add tomato, onion, garlic, jalapeño and sautéed for 2 mins- add ground cumin and stir a few seconds
-Add Beer + tomato chicken bouillon + brown sugar- stir and add beans + bean broth or water- stir
Pessure cook 8 mins- Boom Done!
