How to Make The BEST MEXICAN BEAN AND CHEESE TAMALES | Tamales de Frijoles Enchilados

Today I want to share with you how to make the best bean tamales, now let me tell you these tamales are super eau to make and they are just so flavorful and let’s not forget on how affordable it is to make them too! I hope you give them a try and enjoy them just as much the beans are a recipe from my taquitos, this is the same recipe that my grandma used to use for the gorditas de horno, super delicious!

Ingredients: makes 35-40 tamales it all depends on how much masa and filling YOU use ????
Corn husk
Masa:
6 cups instant corn masa for tamales
6 cups chicken broth
1 1/2 cup lard
1 cup Chile/bean sauce
5 tsp baking powder
1/2 tsp salt if needed
Bean filling:
3 cups pinto beans
8oz chorizo
4 New Mexico or guajillo chile pods
1 chile ancho
1/4 onion , 1/4 onion in strips
1 garlic clove
1/4 tsp whole cumin
1/2 tsp oregano
1/2 tsp chicken bouillon
You also going to need:
chile árbol (optional)
20 oz Queso panela
Sliced pickled jalapeños

Amazing Beef Queso Dip
This beefed up party appetizer Beef Queso Dip is made from scratch and sometimes finds it's way on top of french fries, baked potatoes and vegetables.

Servings: 8
Ingredients
1 lb ground beef
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
4 tbsp butter
1/4 cup flour
1 cup non fat milk
1 cup low fat pepper jack cheese shredded
1 cup low fat sharp cheddar cheese shredded
1 cup salsa
Instructions
In a large skillet over medium heat brown the ground beef seasoned with chili powder, cumin and garlic powder. Drain any fat and set aside.
Make the roux to thicken your sauce by melting butter in sauté pan over medium heat and add the flour. Stir with whisk and continue to cook for 2 minutes. Whisk in milk and continue to cook on low for 3-4 minutes until thickened. Add the salsa and stir to combine.
Whisk in the cheeses until smooth and the seasoned, browned beef. Simmer on low for 5 minutes.
Serve warm with tortilla chips and garnish with chopped cilantro and crumbled Cotija cheese (optional).

Today I’m going to be sharing with you how to make the the best taquitos de frijoles (bean taquitos/flautas) now let me tell you these are not your basic bean taquitos, these taquitos are full of flavor and just take me back to my childhood. Little story behind these taquitos…. in my house we always had beans, chiles and tortillas , my great grandma used to make gorditas en horno for special occasions such as for Christmas,(and that was my favorite) well this is the filling she used and my grandma used and my mom used and now I use! When all we had to eat was beans, well like my grandma used to say era pobre y delicada I couldn’t eat beans all by themselves I had to eat them with Chile and tortillas de harina and well my grandma used to make me taquitos de frijoles this way except with no chorizo or cheese because we didn’t have money for that, but I used to enjoy them soooo much! And not I get to pass it down to my kids and you guys!

4 cups whole beans- 3/4- 1 cup bean broth
Corn tortillas
8 oz chorizo I’m using Johnsonville sausage chorizo
3 guajillo or New Mexico Chile pods
1/4 small onion
1 garlic cloves
1/4 tsp ground cumin
1/4 tsp Mexican oregano
1/4 tsp salt keep in mind your beans and chorizo have salt

My Ron's favorite BLACK BEAN AND CORN SALAD/ Side dish /Vegetarian/Easy ❤

This is an amazing salad, perfect side dish, dip or full meal. There is no doubt that this salad is on top of my list when barbecuing, grilling burgers or when I need a potluck dish because it's always a hit, i use it as a garnish in our meat tacos or a a topping in our burgers. My Ron always asks for it. When entertaining friends i like to set out an assortment of chips and serve it as an appetizer dip, then I watch it disappear quickly. If you're a vegetarian, and looking for a perfect meal this is it, just leave out the cheese and your set, you can make the perfect lettuce tacos, always crunchy and delicious. It's always best when eaten the same day, or your avocado can turn brown, this BLACK BEAN AND CORN SALAD, is easy to make and it's loaded with nutrients.
INGREDIENTS
3 ears of corn
1 Tbsp salt (for boiling corn)
2 Cans black beans (drained and rinsed)
1/2 med purple onion (diced)
1/2 large orange bell pepper (diced)
1 pint cherry tomatoes (cut in half)
1 Large jalapeño (seeds removed and diced fine)
1 large garlic clove (finely minced)
zest of 1 lime
med/large bunch chopped cilantro
COTIJA cheese 1/3 10oz. package (crumbled)
1/2 -3/4 C. Zesty Italian dressing
1 large avocado (cubed)
salt to your liking
• you can leave out the cheese if vegetarian
• best if eaten the same day
