Fruit cocktail cake with white chocolate frosting recipe ingredients:
Grease pan with butter
Place butter paper and grease again
Room temperature eggs 6
Beat eggs until fluffy
Icing sugar 150 gram
Vanilla essence few drops
Beat on high speed until creamy form
Add 150 grams all purpose flour little by little and mix slightly
Pre heat oven for 10 minutes on 200c
Pour the mixture in mold and bake for 20 to 25 minutes on 200 c
Check with tooth pick if it comes clean, cake is ready
Let the sponge cool down
Meanwhile prepare whipping cream
Whipping cream 200 grams
Whip until stiff peaks
Cut the sponge into half
Pour 4-5 tbsp Suger syrup on the sponge
Spread whipping cream
Fruit cocktail
Place the other half of sponge and keep in refrigerator
Rich White Chocolate Frosting
White chocolate 300 grams
Whipping cream 100 grams
Butter 100 grams
Microwave chocolate for 30 seconds
Mix it and microwave again for 30 seconds
Microwave butter for 20- 30 seconds
Microwave cream for 20 seconds
Whisk all three ingredients well until smooth texture
Cover with cling wrap and Refrigerate for 15 minutes
15 minutes later
Remove cling wrap and whisk again
Spread half of frosting on cake and set evenly
Keep the cake in freezer for 20 minutes
Cover the frosting bowl again with cling wrap
20 minutes later
Spread the rest frosting and set evenly
Decorate with fondant according to any occasion

Mixed Fruit Cake with Orange Marmalade Glaze | Recipe Demonstration
Wherein I show you how to make a mixed fruit cake in a quick, easy way! Excuse the repetition of incorporated - it seems to be the only way I can describe making a cake...
Ingredients:
450g self raising flour
220g butter/margarine
220g sugar (mix 110g brown sugar and 110g white caster sugar)
450g dried mixed fruit
2 eggs
8 tablespoons milk
1 tablespoon black treacle
1 tablespoon mixed spice
2-3 tablespoons marmalade (orange or apricot)
Method:
1. Preheat your oven to 180C/160C for fan. Grease and line a tin.
2. Sift the flour and mixed spice into a large bowl and rub in the butter with your fingertips until it resembles breadcrumbs.
3. Add the sugar and break up any lumps, before adding the dried fruit and mixing well.
4. Prepare the wet ingredients in a jug - pour the milk in, crack in the eggs and whisk them, and then whisk in the treacle too.
5. Spoon the mixture into the prepared tin and pat down with a spoon.
6. Cook in the preheated oven for 1 hour, and then remove it and check the middle with a skewer/cocktail stick. If it doesn't come out clean, cover the tin with foil and cook for at least another ten minutes, though it could take longer depending on how powerful your oven is.
7. Leave the cake to cool in the tin for 20-30 minutes, before turning it out onto a cooling rack/plate.
8. Heat the marmalade in the microwave for 30-40 seconds and stir well, before brushing onto the top and sides of the cake.
9. Eat and enjoy!
