My husband hates CHOCOLATE CAKE but LOVED this one!

If you’re looking for a rich, fudgy chocolate cake to satisfy your sweet cravings, then this cake IS IT! Paired with an indulgent chocolate fudge frosting, this is by far the best chocolate cake I’ve ever had.
INGREDIENTS:
Chocolate Cake
- 1½ cups (190 g) flour - regular all purpose
- ½ cup (50 g) cocoa powder - unsweetened
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup (170 g) unsalted butter
- 1¼ cups (200 g) dark chocolate (50%)
- ⅓ cup (80 g) milk - room temperature
- 1½ cups (300 g) white sugar
- 1½ tbsp instant coffee powder
- ¼ cup (55 g) unflavoured vegetable oil - I use canola oil
- 1 tsp vanilla essence/extract
- 2 large eggs - room temperature
- ½ cup (110 g) hot water
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F). Remember to grease the bottom and sides of two 8 inch cake tins (mine are 3 inch deep), and also line the bottom of the tin with baking/parchment paper.
IMPORTANT: Do not open the oven door too early to check the cake otherwise this can cause the cake to sink in the middle. Enjoy :)
Chocolate Fudge Frosting
- 1 cup (226 g) cream
- 4 tsp cocoa powder - unsweetened
- 2½ cups (400 g) dark chocolate (50%)
- 1 cup (226 g) unsalted butter
- 1 cup (170 g) icing sugar - also known as powdered sugar/confectioners sugar
- ½ tsp instant coffee powder
- ½ tsp salt
- 2 tsp vanilla essence/extract

Chocolate Fudge Pudding Cake
There’s a special type of magic when it comes to this chocolate fudge pudding cake. A quick batter is mixed together, and liquid is poured over the top. Once baked, the two layers flip, and a gooey pudding layer settles to the bottom while a fluffy cake layer floats to the top. It’s easy to bake and hits all the right chocolate notes!

INGREDIENTS
For the cake batter:
- 3/4 cup all-purpose flour
- 1/2 cup white granulated sugar
- 3 tbsp Dutch process cocoa
- 1 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 1 large egg
- 1/2 cup whole milk
- 2 tsp vanilla extract
- 4 tbsp melted butter
- 1 cup semi-sweet chocolate chips
For the dry mixture
- 1/3 cup white granulated sugar
- 1/3 cup light brown sugar
- 1/4 cup Dutch process cocoa
- 1 1/2 cups hot brewed coffee (or hot water)
INSTRUCTIONS
For the cake batter:
- Preheat oven to 350°F. Butter a 9×9 baking dish and set it aside.
- In a large bowl, combine the flour, cocoa, sugar, baking powder, and salt. Whisk to combine evenly. Add the egg, milk, vanilla extract, and butter. Whisk until completely combined and smooth. Add the chocolate chips and fold them into the batter. Pour the batter into the prepared baking dish and spread evenly.
For the dry mixture:
- In a medium bowl, mix the white sugar, brown sugar, and cocoa. Sprinkle evenly over the prepared batter. Pour the hot coffee over the dry mixture and batter.
- Place the baking dish in the preheated oven until the cake is puffed and set on top but jiggly around the edges and underneath the cake layer, 25-35 minutes. Once baked, remove the cake from the oven and cool for 15 minutes before serving.

Ingredients:
For the cake:
1¾ cups (220g) Flour
3/4 cup (75g) Cocoa powder
1½ teaspoons Baking soda
1 teaspoon Baking powder
1¾ cups (350g) Sugar
1/4 teaspoon Salt
2 Eggs
1 cup (240ml) Buttermilk
1/2 cup (120ml) Vegetable oil
1 cup (240ml) Coffee
1 teaspoon Vanilla extract
For the frosting:
3/4 cup (175g) Butter, softened
1½ cups (335g) Cream cheese, room temperature
2/3 cup (67g) Cocoa powder
1½ cups + 2 tbsps. (200g) Powdered sugar
1 teaspoon Vanilla extract
Directions:
1. Make the cake: Preheat the oven to 350˚F (180C˚). Butter two 8-inch (20cm) cake pans and line the bottoms with a parchment paper, grease the sides. Lightly dust with cocoa powder. Set aside.
2. To a large bowl add flour, cocoa powder, sugar, baking powder, baking soda and salt. Stir well and set aside.
3. In a separate bowl mix buttermilk, coffee (or water), eggs, oil and vanilla extract. Mix until well combined.
4. Add the wet mixture to the dry, whisk until incorporated.
5. Pour the batter into prepared pans.
6. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool completely before frosting.
7. Make the frosting: in a large bowl beat butter until light and fluffy. Add cream cheese and beat until combined and smooth. Add cocoa powder vanilla extract and salt. Beat until combined. gradually add powdered sugar, beat on low speed until combined and creamy.
8. Transfer the frosting into a piping bag. Cut the top of the cakes.
9. Place one cake layer with flat side down. Spread a layer of frosting, place the second layer of cake on top of the frosting, flat side up. Spread evenly the frosting on top and sides of the cake.
10. Refrigerate for at least 2-3 hours before serving.
Notes:
• Use good quality cocoa powder
• You can bake both pans at the same time. My oven is too small, so I baked it separately.
• If you don’t have buttermilk you can make homemade buttermilk: whisk 1 tablespoon of vinegar/lemon juice with 1 cup of milk and let sit for 10 minutes.

Moist, Fudgy Chocolate Cake | Easy, One Bowl Recipe
Everyone needs a quick chocolate cake recipe for those dessert emergencies...like when it’s midnight and you really want cake. Here is a recipe for a moist, fluffy chocolate cake with chocolate frosting that uses ingredients you probably already have. This chocolate cake is so easy, you can make it when you’re half asleep (ask me how I know).
As an added bonus, this chocolate cake doesn’t use eggs or butter so it’s vegan friendly. The frosting can also be made vegan.

Ingredients (Makes one 9x9 inch (23x23 cm) pan)
-Cake
Flour 1 ½ cups | 180 g
Sugar 1 cup | 200 g
Cocoa ½ cup | 40 g
Salt ½ tsp | 3 g
Baking Soda ¼ tsp | 2 g
Baking Powder 1 ½ tsp | 6 g
Vegetable Oil ½ cup | 112 g
Coffee, Hot 1 cup | 240 mL
Vanilla Extract 1 tsp | 5 mL
-Frosting
Chocolate (60% Cacao) 5 oz | 142 g
Heavy Cream/Water ¼ cup | 60 mL
(I used water to keep the cake vegan)
Directions
1. Preheat oven to 350º F (178º C). Line 9x9 inch (23x23 cm) square pan with parchment.
2. Combine flour, sugar, cocoa, salt, baking soda and baking powder in a bowl.
3. Add the oil, coffee and vanilla to the dry ingredients. Whisk until thoroughly combined. Pour the batter into the prepared pan.
4. Bake the cake for 20 to 25 minutes, until a toothpick inserted into the center comes out mostly clean (a few moist crumbs is okay. It's better to slightly underbake than overbake the cake). Cool completely before frosting.
5. Heat the chocolate and heavy cream or water in the microwave for 30-45 seconds. Stir until smooth. Cool to room temperature before spreading over cooled cake.
