ROASTED CHILLI GARLIC HUMMUS
SPICY & CREAMY
TO MAKE HUMMUS :
Chickpeas – 1 cup
Water – 3 cups to soak chickpeas
Salt – 1 tsp
Olive oil – 1 cup
Dry red chilli – 3
Garlic – 10 cloves
Sesame seeds – 3/4th cup Salt to taste
Lemon juice – 1 tbsp
Roasted cumin powder – 1 tsp
Reserved chickpea water (Warm – 1 cup if required
HUMMUS RECIPE WITHOUT TAHINI | EASY HOMEMADE CHICKPEAS DIP WITH GARLIC
Today's recipe is - Hummus, which is a dip, spread, or savory dish made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic.
But today we will make hummus without tahini , which for me doesn't make a lot of difference.
It is popular in the Middle East and in Middle Eastern cuisine around the globe.
It tastes best when served with pita bread , crackers , veggies , chips or almost anything that requires a dip.
You can also use hummus in salads, vegan pastas and many more.
Let's see what all is needed -
1- Chickpeas - soaked overnight , boiled - 2 cups
2- Salt - as per taste
3- Oil - 2 Tbsp. - olive oil preferred
4- Lemon - 1/2
5- Garlic cloves - 5
6- Cumin powder - 1/2 Tsp.
7- Water - 2-3 Tbsp.
For garnishing -
1- Oil - 1 Tbsp.
2- Chili flakes - 1/2 Tsp.
3- Chopped coriander

ROASTED GARLIC HUMMUS
Ingredients
• 1 bulb of garlic
• 2 teaspoons olive oil
• 1 540 ml can of chickpeas drained and rinsed
• 2 teaspoons tahini
• juice of one large lemon
• sea salt to taste
• 3-4 tablespoons olive oil
Instructions
• Preheat your oven to 375 degrees Fahrenheit and slice the root end off the bulb of garlic.
• Place the garlic on a parchment lined baking sheet, cut end up, and drizzle with the olive oil.
• Roast the garlic for about 25-30 minutes or until it's soft and slightly browned.
• Remove the garlic from the oven and let it cool slightly before squeezing the roasted cloves out of their skins and into the bowl of your food processor.
• Add the chickpeas, the tahini, lemon juice and sea salt, and blend on high speed until the mixture is creamy and smooth.
• While the food processor is running, drizzle in the olive oil until the hummus becomes even more creamy and pale in colour.
• Serve immediately with your favourite veggies, pitas, crackers or chips!

How to make Garlic Hummus
Garlic Hummus: Hummus comes from the Arabic word meaning “chickpeas”. The earliest recipes for Hummus are recorded in cookbooks written in Cairo in the 13th century. It is traditionally prepared with puréed chickpeas and tahini, and also contains many spices, herbs, and nuts. Our hummus recipe ads a twist of sautéed garlic and fresh mint.
Ingredients:
1 large can (796 ml) of chickpeas
3 cloves of garlic
1 bunch of fresh mint
4 tbsp of lemon juice
2 tbsp of Tahini
3 tbsp of Olive Oil
½ tsp of cumin
Salt and pepper to taste
Method:
Drain the chickpeas conserving the water from the can. In a food processor, add the chickpeas, half of the water from the can, mint, lemon juice, tahini and cumin. Pulse until smooth. In a frying pan, add one tbsp of Olive Oil. Dice the garlic cloves. On medium heat, sautée the garlic until lightly browned. Remove from heat and add the sautéed garlic to the chickpea mixture. Pulse a few more times, transfer to a serving bowl and drizzle with the remaining 2 tbsp of Olive Oil. Serve with fresh pita bread.
