How to make Garlic Hummus
Garlic Hummus: Hummus comes from the Arabic word meaning “chickpeas”. The earliest recipes for Hummus are recorded in cookbooks written in Cairo in the 13th century. It is traditionally prepared with puréed chickpeas and tahini, and also contains many spices, herbs, and nuts. Our hummus recipe ads a twist of sautéed garlic and fresh mint.
Ingredients:
1 large can (796 ml) of chickpeas
3 cloves of garlic
1 bunch of fresh mint
4 tbsp of lemon juice
2 tbsp of Tahini
3 tbsp of Olive Oil
½ tsp of cumin
Salt and pepper to taste
Method:
Drain the chickpeas conserving the water from the can. In a food processor, add the chickpeas, half of the water from the can, mint, lemon juice, tahini and cumin. Pulse until smooth. In a frying pan, add one tbsp of Olive Oil. Dice the garlic cloves. On medium heat, sautée the garlic until lightly browned. Remove from heat and add the sautéed garlic to the chickpea mixture. Pulse a few more times, transfer to a serving bowl and drizzle with the remaining 2 tbsp of Olive Oil. Serve with fresh pita bread.

GARLIC ROASTED HUMMUS **dip & spread**
RECIPE BELOW :

RECIPE
Makes 600ml
2 whole garlic bulbs
1 tablespoon of oil + 80ml olive oil
1 handful of fresh thyme
400g can chickpeas, rinsed and drained
juice of one lemon
2 large tablespoons of tahini paste
Salt and pepper
Preheat the oven to 180C
Slice the tops off the garlic bulbs. Sprinkle with some olive oil. Bake in oven for 40mins or until garlic cloves are soft. Remove from oven and allow to cool. Remove from skin.
(you can cheat and add the garlic bulbs in the microwave for 3-6mins. Be careful when handling it as it will be hot. Allow it to cool and gently squeeze the bulbs out of their skin)
Heat a tablespoon of olive oil in a pan. fry lightly the garlic, add tahini paste, stir until slightly thickened. Add chick peas. Fry for only a few minutes or until peas are lightly softened.
In a food processor , garlic & chickpea mixture, thyme and blend. At this point it will still be a little lumpy. Add olive oil in batches and keep processing until smooth.
Place dip in a serving bowl and allow it to refrigerate for half hour before serving.
Serve with crackers, tips of carrots and celery

How To Make Roasted Garlic Hummus | Easy Hummus Recipe (vegan)
I'll show you how to make the most delicious roasted garlic hummus - it only takes a couple of ingredients.
1 head of garlic
1 teaspoon olive oil
1 can of chickpeas
1 teaspoon olive oil
5 - 6 tablespoons lemon juice
2 - 3 tablespoons olive oil
2 tablespoons raw tahini
Zest from a lemon
1/4 teaspoon salt
Rub head of garlic with olive oil, wrap in tin foil, roast on 325°F (162°C) for 65 - 70 minutes.
Toast chickpea in little olive oil for 3 - 5 minutes, then combine them in a food processor with the lemon juice, olive oil, raw tahini, zest and salt, then the roasted garlic (squeezed out of the skin). Process until smooth. Serve with olive oil drizzle and sumac.
