How To make Georgia Peaches & Cream Cake
FILLING:
2 lb Ripe peaches; peeled
1/3 c Sugar
2 tb Fresh lemon juice
1 tb Quick-cooking tapioca
1/4 ts Freshly grated nutmeg
CRUMB TOPPING:
1/2 c Unbleached all-purpose flour
6 tb Light brown sugar
4 tb Unsalted butter; chilled
1/4 ts Cinnamon
CAKE:
6 tb Sour cream
1/4 ts Baking soda
1 lg Egg
1/3 c Sugar
4 tb Unsalted butter; softened
1 1/2 ts Pure vanilla extract
3/4 c Unbleached all-purpose flour
1/2 ts Baking powder
1/4 ts Salt
Preheat oven to 375~, 15 minutes before baking, with the rack in the center of the oven. Butter an 8" square baking pan, preferably glass. Cut the peaches into 1/2" slices. Put in a pan with sugar, lemon juice, tapioca and nutmeg and toss gently. Cook over high heat until syrup begins to bubble, about 4 minutes. Set aside. FOR THE TOPPING: Work the flour into the sugar, butter and cinnamon until the butter is the size of small peas. This can be done with a food processor or pastry blender. Set aside. FOR THE CAKE: Stir the sour cream and baking soda together and let stand while you begin the cake. Cream the egg, sugar and butter in the processor or with a mixer until it is light and fluffy. Add the vanilla and sour cream and mix well. Gently fold in the flour, baking powder and salt. In the processor, do this by pulsing the machine on and off several times. Spread the warm peaches and their juice in the bottom of the baking pan. Spoon the batter over the peaches and spread in a thin, even layer with a rubber spatula. It's OK if the peaches are not completely covered. Sprinkle the topping over the batter. Bake until a toothpick inserted into the center of the cake, not the fruit, comes out clean, 25-28 minutes.

Ingredients:
*Peaches 2 ( 6LBS. CANS)
This is for a 9x13 Deep Dish, If you're Baking using a Regular 9x13 Baking Dish then use only 5-6 (15 oz cans).
*Light Brown Sugar (1 Cup)
*White Granulated Sugar (4 1/2 Cups)
*Nutmeg (2-3 Tablespoons)
*Pre-Mixed Cinnamon & Sugar Mixture (3 Tablespoons)
*Ground Cinnamon (1 Tablespoon)
*2 Sticks of Salted Butter (Reserve 1 Stick of Salted Butter to melt, to add to your Peach Cobbler for a Beautiful & Golden Crust).
*Baker's Joy Baking Non-Stick Spray
*9 X13 Deep Dish Baking Pan
*Pastry Baking Brush
*Pillsbury Pet*Ritz Pie Crust Regular (5 packs)
Directions:
In a very large cooking pot on Medium High (#5 if you're using an Electric Stove) , add your peaches. Remember to cut your peaches in 1/2, that's if you don't want to add the whole sliced peaches to your Homemade GA Southern Peach Cobbler. Next let's add our 2 1/2 cups of White Granulated Sugar, along w/ our 1- cup of Light Brown Sugar. And cook on Medium-High until our Peaches begin to come to a small simmer. Once we notice that our Peaches are simmering, let's add our 1- Stick of Salted Butter. Mix extremely well, & after our butter has melted into our peaches let's have our (clean tasting spoon 0n the side) to taste now. Ok if our peaches are lightly sweet-en (have become sweet) let's now add our final 2 1/2 cups of Sugar. Stir well, taste & turn off our stove.
Next let's begin to pre-pare our Pillsbury Pie Crust by cutting them in strips just as you've seen me do in my video. For each layer of your pie crust remember to sprinkle a little of our Pre-Mixed Cinnamon & Sugar, & also don't forget to sprinkle w/ our Nutmeg as well.
Finally, don't forget to butter each layer of our Pie Crust for our Golden & Buttery and Flaky Pie Crust for our Peach Cobbler.

Ingredients
3 c flour
1 tbsp baking powder
1/2 tsp salt
2 tbsp vanilla extract
2 c sugar
1 c brown sugar
1/2 tsp nutmeg for batter (optional)
6 eggs
3/4 C Butter milk
2 sticks unsalted butter
1/2 C Butter flavored shortening
2 15 oz cans peaches in heavy syrup
cinnamon nutmeg
lemon
3 oz cream cheese
3 tbsp butter
peach juice
2 tbsp heavy cream
1 c powdered sugar
