Add all ingredients into the pan in the order listed. Select sweet bread and push Start. NOTE: Be sure to use peaches canned in light syrup. NOTE: If dough is too dry, add another TBS of peach juice after 5 minutes of kneading.

This was a great refreshing dessert for tonight's dinner. An angel food cake roll filled with a peach puree and whipped topping. I decorated it by dusting with powdered sugar, swirls of whipped topping and peach slices. It was light and delicious.

Ingredients needed: For the cookie crust: 1 stick salted butter, melted, browned and cooled ⅔ cup packed dark brown sugar ¼ cup granulated sugar 1 large egg 1 teaspoon vanilla extract 1 ¼ cups all-purpose flour ½ teaspoon baking soda 1 teaspoon cream of tartar 1 teaspoon cinnamon Pinch of salt For the cream cheese frosting: 4 ounces reduced-fat cream cheese, softened to room temperature 2 tablespoons salted butter, softened to room temperature 1 cup powdered sugar, sifted (so your frosting isn't lumpy) ½ teaspoon vanilla extract For the fresh fruit topping: 2 medium peaches, sliced into 1/2’’-thick wedges 3 strawberries, tops removed and berry sliced lengthwise into 4 slices ⅓ cup blueberries

Recipe development can be likened to embarking on a new adventure. Combining unsuspecting ingredients and creating new flavors is euphoric. It is a poetic way to describe it but thats how I see food.
This Peaches and Toast Recipe has several components to it and lets break it down over here.
THE BREAD It is not a TOAST without a good bread. For this recipe, only a fresh Brioche bread will do :)
THE CUSTARD Taking inspiration from Tres Leches, I combined a Cup of Evaporated Milk, 3/4 Cup Heavy Cream and 1/4 Cup Sweetened Condensed Milk and 1 egg.
THE CREAM CHEESE SPREAD Combine a Cup of Cream Cheese with 1 Tbsp of Date Syrup. Trust me on this one. :)Refrigerate.
THE PEACH TOPPING Slice your Peaches and mascerate with Muscovado Sugar. Warm up some butter and add your peaches. Set Aside.
THE TOASTED ALMOND TOPPING Get a handful of Almonds and toast it. Roughly chop it and set aside. Soak the slices of Brioche bread on the custard and refrigerate.
PUTTING IT ALL TOGETHER On a pan heat up a Tbsp of butter and fry the soaked Brioche Bread. Set aside. Spread your Date Cream Cheese generously. Top with Peaches, Toasted Almonds. Layer another Brioche Bread and repeat the process.
Let me tell you, guys, this was DIVINE! This is a TOAST/Breakfast for special mornings. Yes, it is DECADENT but oh soooooo worth it! Give it a try and let me know your thoughts.
