How To make German Gingerbread Cookies
3/4 c Soft margarine
1/2 c Brown sugar
2 ts Ginger
1/2 ts Salt
1 t Cinnamon
1/4 ts Ground cloves
1 Egg
3/4 c Molasses
3 c Flour
1 t Baking soda
1/2 ts Baking powder
Mix all ingredients together well. Make balls of dough the size of walnuts, and place them on a greased cookie sheet 3-4" apart. Flatten with a glass dipped in sugar. Bake at 325 F for 6-8 minutes. Or, if you like, refrigerate overnight. Roll out cold dough for cookie shapes cut with cookie cutters. If dough is sticky, add flour. 55g Soft Unsalted Butter

Lebkuchen is a delicious spice cookie that is soft and cakey! This cookie is German and the addition of zests inside really sets it apart from our traditional molasses and gingerbread cookies! Lebkuchen can be eaten with a glaze with chocolate or plain !This Honey Sweetened German Cookie can last up to a week in the fridge or a couple of days on the counter, not that they will last this long! Each version is as good as the other, so you can mix it up! Try this crowd pleaser, you won't be disappointed

⚪️Ingredients you will need:
150g Brown Sugar
130g Honey
50g molasses
50g Butter
2 Eggs
300g Flour
150g Ground Almonds
2 tsp Ginger
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Allspice
1/8tsp Clove
1/2 tsp Baking Powder
1/4 tsp Bicarbonate of Soda
1/2 tsp Salt
Zest of 1/2 Lemon
Zest of ½ orange
75g Icing Sugar
20-25ml Lemon Juice

⚪️Instructions if you need it:
Step 1 - Cookie
1. Cream Brown sugar, molasses, honey, and butter together with a hand mixer
2. Add the eggs one at a time mixing in between
3. Sift all the other ingredients into the mix
4. Add the zests
5. Mix well
6. Refrigerate 30 minutes
Step 2 - Shaping the cookie
1. Weight pieces of 40g
2. Make them round
3. Place them on a baking sheet
Step 3 - Baking
1. Bake for 15-20 minutes at 325°F
2. The cookies should be golden
3. Let them cool down for 30 minutes
Step 4 - Glaze
1. Whisk the powdered sugar and the lemon juice together
2. It should not be too thick because we just want a light glaze.
3. Enjoy!

5 eggs
10.58oz (300g) brown sugar
7.05oz (200g) sugar
1 teaspoon of fresh lemon or orange zest
1 pinch of salt
1/4 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom
1/4 teaspoon ground white pepper
1/4 teaspoon German gingerbread spice mix: 4 teaspoons ground cinnamon, 2 teaspoons ground nutmeg, 2 tablespoons ground cloves,
2 tablespoons ground coriander, 1 teaspoon ground cardamom, 1 teaspoon ground ginger, 1 teaspoon ground anise, 1 teaspoon ground allspice.
2.11oz (60g) candied lemon peel
2.11oz (60g) candied orange peel
0.10oz (3g) ammonium bicarbonate (bakers ammonia)
0.70oz (20g) rum
26.45oz (750g) all-purpose flour
Glaze:
8.81oz (250g) icing sugar
12 teaspoons (60g) milk
1 teaspoon of rum
