4 boneless pork chops -- 3/8" thick
1 teaspoon vegetable oil
1 jar (8 oz.) plum preserves
2 teaspoons ground dry ginger
3 Tablespoons cider vinegar
Heat oil in nonstick skillet over medium-high heat. Brown chops on one side, turn; stir together remaining ingredients and add to skillet. cover skillet, lower heat and simmer 5 minutes. Serve with roasted potato wedges if desired. Makes 4 servings.

Chinese Plum Sauce Pork Chop | Goes Very Well with Steam Rice

This Chinese Plum Sauce Pork Chop is a definitely a very easy and simple yet delicious pork dish. It has a blend of sweetness, saltiness, spiciness and a little sourish, just a slight one in taste. It goes very well with steam rice.
You can always make more sauce if you are the type that likes to pour lots of sauce into rice...yummy....
As for the part of pork I used will tenderloin lean meat as I feel that for Pork Chop is always good to use leaner meat instead of all the fatty parts. It will make the dish very oily and you get very little of meat part as you fried the fats will turned to oil.

Ingredients:
Serves 4 - 5 pax

Marinated chicken

~500g (2 pieces or 17.6 oz) boneless chicken thigh
0.5 teaspoon salt
2 tablespoons white rice wine (can be omitted if you can't take alcohol)
1 tablespoon light soy sauce
1 stalk of spring onion (stem only) - crushed
A few dashes of white pepper
2 tablespoons cornflour (add about 10 mins before pan-frying)
Other ingredients

2 cloves of chopped garlic
2 tablespoons plum paste or plum sauce (can be replaced with honey)
2 tablespoons sweet chilli sauce (can be replaced with ketchup)
2 tablespoons low sodium light soy sauce
2 tablespoons premium dark soy sauce
1 cup (250ml or 2.45 fl oz) water
2 teaspoons lemon juice
