How To make Glazed Almond Cookies
1/2 c salted butter, -- room
: temperature 3/4 c sugar
1 lg egg
1 ts almond extract
1/4 c ground pecans
1 c sliced almonds
1 c all-purpose flour
1/4 c heavy cream
1 ts almond liqueur
1 c semisweet chocolate chips
2 ts dark corn syrup
Preheat oven to 350. In medium mixing bowl, blend butter and sugar with electric mixer. Add egg and almond extract. Beat until light and fluffy. Add ground pecans and flour and blend at low speed. Form dough into 2-inch balls. Roll in sliced almonds and coat each well. Place balls on ungreased cookie sheets, 2 inches apart. Bake 15 minutes or until cookies are slightly golden brown. Transfer quickly to smooth, flat surface to cool. Glaze: Scald cream in saucepan and remove from heat. Stir in chocolate chips, liqueur, and corn syrup and cover. Let stand for 15 minutes. Whisk glaze until smooth, being careful not to stir too vigorously. Drizzle patterns on cooled cookies. Dip some cookies halfway into chocolate. Chill cookies on waxed paper until chocolate has set. How to make Glazed Lemon Butter Cookies Recipe
Glazed Lemon shortbread cookies Recipe
☞ Serving: 10 cookies
✎ Ingredients
☞ For the cookie dough
unsalted cold butter 65g
all-purpose flour 100g
rice flour 25g
powdered sugar 25g
a pinch of salt
milk 15g
☞ For the glaze
lemon zest 1pc
lemon juice 8g
powder sugar 40g
✎ Instructions
1. Sift flour, powdered sugar, rice flour and a pinch of salt, then add all dry ingredients into a large mixing bowl.
2. Toss cold butter in the dry ingredients until each side is coated. Roughly cut the butter into small cubes and toss in the flour again, until each side is coated. Freeze for 1 hour.
3. put frozen butter and dry ingredients into a food processor, and pulse a few times until the mixture resembles coarse, sandy crumbs.
4. Add the mixture in a large bowl, pour 15g milk into it and mix well, then use your fingers to quickly rub the mixture until it resembles from flakes to a dough ball.
5. Transfer the dough to a baking paper, cover another paper on top, then roll out to 1cm thick. Freeze for 1 hour.
6. Take the dough out of the fridge and cut it into a 3x5cm rectangle.
7. Preheat the oven to 130°C, bake for 45-55 minutes. Remove and let cool on rack.
8. Zest a lemon in a small bowl, set aside. Squeezing out about 8g of juice from lemon.
9. Make the glaze and garnish. In a small bowl, whisk 8g of lemon juice and 40g of powdered sugar together. Dip the top side of the cookie into the glaze and place it on a wire rack, and garnish a little lemon zest on top to set.

Ingredients
Dough
3 cups almond flour
1 cup granulated sugar
Zests of 2 lemons
2 eggs
1 tsp vanilla extract
1/4 cup flour for rolling the dough
Icing
1/4 cup milk (any type)
1/4 cup vegetable or canola oil
1/4 cup rose water or orange blossom water
Powdered sugar
1 tsp lemon juice
Food coloring of your choice
Metallic food coloring or edible dust (color of your choice)
Garnish
Decorative flower bouquet for cookies.

Ingredients
3 egg yolks
1/2 cup + 1 Tbsp sugar (120g)
1 package of vanilla sugar
Zest from 1 lemon
2 cups of ground almonds (adding up to another 1/2 cup if required) (200-250g)
Glaze: 3/4 cup icing sugar + 2 Tbsp’s lemon juice
Roll out dough to 1/2” in thickness
Bake in a 350 degree oven for about 10 min
