How To make Good Enough For Grandma Apple Streusel Muffin
1 1/2 c Flour, all purpose
1 c Sugar
2 ts Baking powder
2 ts Cinnamon, ground
1/4 ts Baking soda
1/2 ts Cloves, ground
1 c Apple, peeled and chopped
1/2 c Walnuts, chopped
2 Eggs, beaten
1/2 c Buttermilk or sour milk
1/4 c Butter or margarine
1/2 c Flour, all purpose
1/3 c Brown sugar, packed
1 t Cinnamon, ground
1/4 c Butter or margarine
My grandma never made these muffins, but she could have, relates John T. Ham, Jr., of Cedar Rapids, Iowa. "They're good, old-fashioned grandma quality. Serve them any time of the year, but take along some for a breakfast picnic. Or wait till a picnic draws close and bring them out as an end-of-the-day treat." At least four generations of John's clan have rated Devil's Backbone State Park near Strawberry Point, Iowa, their top picnic spot. 1. In a large bowl, combine 1 1/2 cups flour, 1 cup
sugar, baking powder, 2 teaspoons cinnamon, baking soda, and cloves.
Stir in apple and walnuts. 2. Combine eggs, buttermilk, and melted butter. Add
flour to the mixture. Stir till just combined. Spoon batter into greased muffin cups or pans lined with paper bake cups. 3. For Streusel topping, in a small bowl, stir
together the 1/2 cup flour, the brown sugar, and 1 teaspoon cinnamon. Stir in softened butter. Sprinkle over batter in muffin cups. 4. Bake in a 400 degree oven for 20 to 25 minutes.
Serve warm.

SOUR CREAM BLUEBERRY STREUSEL MUFFINS
{makes 12 muffins}
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg, room temperature
1/3 cup milk
1 teaspoon vanilla
1/3 cup sour cream
1 cup fresh blueberries
-for the topping-
1/2 cup white sugar
1/3 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/8 teaspoon salt
1/4 cup unsalted butter, cubed and soft
Preheat oven to 400 degrees. Grease muffins cups with Baker's Joy or line with baking papers.
To make the streusel topping, mix together all the ingredients, mashing/incorporating with a dinner fork or pastry cutter, and set aside.
For muffins, whisk together the flour, sugar, salt, and baking powder in a large mixing bowl. Make a well in the middle of the dry ingredients, and stir in oil, milk, and egg. Add vanilla and sour cream. Stir with a wood spoon. Fold in blueberries. Using an ice cream scoop, fill muffin cups just below the top, and sprinkle - I mean, heap on - the crumb topping mixture! Use all of the crumb topping! Trust me!
Bake for 20 minutes, then check them in 1-minute intervals until they're done. Don't overbake them. Cool completely in pan or your tops will separate from your bottoms. And nobody needs to be topless - or bottomless, for that matter. Gently run a knife around the edges and carefully lift out of the tin. Replace any crumbly streusel topping that falls off. Or eat it. I prefer the latter. Serve with butter, naturally!

30 day muffin mix is one of the most shared recipes, it is so easy to make and really tasty. You can bake or microwave it, and both are good. I hope you enjoy it a much as I do.
Recipe:
2 cups milk
2 eggs
1/2 cup oil
2 and 1/2 cups flour
2 cups bran
1 and 1/2 cups sugar (sweet version)
1 and 1/2 teaspoons baking powder
1 cup fruit (I like raisins)
1 teaspoon salt
1 teaspoon all spice (I used cinnamon)
Mix all together. Bake in muffin tray or microwave in a mug (should be microwave proof)

APPLE CINNAMON BREAKFAST MUFFINS & FANCY TOAST TWO WAYS
APPLE CINNAMON BREAKFAST MUFFINS
Makes 18-20 muffins
1 ¼ cup oil
3 large eggs, room temperature
2 teaspoons vanilla
2 cups sugar
3 cups all-purpose flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup granny smith apples, peeled and chopped
1 cup pink lady, honeycrisp, or other sweet red apple, peeled and chopped
1 cup flaked coconut
1 cup walnut pieces, optional
Whole oats for sprinkling on top of muffins
Set the oven to 350F.
In a medium bowl, combine the oil, eggs, and vanilla; whisk til combined. In a separate large bowl, whisk together the sugar, flour, soda, salt, and cinnamon. Stir the wet ingredients into the dry ingredients using a heavy wooden spoon. Then stir in the apples, coconut, and nuts. Stir well to combine. Line 20 muffin cups with
paper liners. Fill each cup two-thirds full with batter. Sprinkle oats on the top of each muffin. Bake for 23-25 minutes until golden brown.
FANCY TOAST TWO WAYS
For the avocado toast, spread a whole mashed avocado on a piece of lightly toasted bread. Sprinkle with lemon pepper. In the meantime, fry an egg or baste an egg in coconut oil and butter. Slide egg off onto the avocado toast and sprinkle with salt and pepper and red pepper flakes.
For the fruit and nut toast, spread peanut butter on a piece of lightly toasted bread. Lightly salt the peanut butter layer with sea salt. Cover the top with fresh berries such as raspberries and blueberries. Drizzle the toast with honey.
