Our Grandma’s Italian Sunday Gravy - Made with Love
Sunday Gravy, our ultimate comfort food! Our Grandma’s Italian Sunday gravy recipe was passed down to our mother, and now us, since we love to cook so much. Our Sunday sauce is made with beef Braciole, Mild Italian Sausage, Pork Ribs, and our homemade Meatballs inside. Braciole is a tenderized eye-round beef roll, seasoned with Italian spices, such as fresh garlic, parmesan cheese, parsley, salt, and pepper, and then tied up to keep in place. The braised meats add that traditional flavor to the Sunday sauce, that will melt in your mouth.
This delicious Italian feast is fit for a king! The process of putting together this Italian stable is well worth the time. You can use any type of pasta with this gravy, and it goes great with a nice salad and Italian bread.
Be sure to keep the family at bay while the sauce is cooking. The aroma will drive them crazy while waiting to eat!

Braciole Recipe:
• 3 6-8 oz. eye-round steaks (tenderized)
• 3 teaspoons of grated Parmesan cheese
• 3 teaspoons of Italian parsley Salt and pepper to taste

Gravy Ingredients:
• 2 6.5 lbs. of whole pair tomato (Pureed in a blender)
• 4 cups of diced onion
• 1 cup of chopped garlic
• 2 cups of olive oil
• 2 cups of fresh basil leaves
• 1/2 cup of Parmesan cheese
• Salt & pepper to taste
• Rack of Pork Ribs
• 1 lbs. of Italian Sausage (mild or hot)
• 10 Meatballs
• 2 Braciole
Instructions:
1. Prepare the Braciole, Sausage, Ribs & Meatballs.
2. In a 12 qt. pot on med-high heat, add 1/2 cup of olive oil.
3. Add the Braciole and Sausage and sear on all sides.
4. Remove the meat and then add 1 & 1/2 cups of olive oil, dice onion and garlic and fresh basil. Cook until golden brown.
5. Add tomato, Parmesan, salt and pepper.
6. Add all the cooked meat into the pot of sauce continue cooking until the sauce come to a light boil.
7. Reduce heat and continue cooking for 3 hours (Frequently Stirring.
8. Cook your favorite pasta and enjoy.

Corianer 2g/kg
Caraway 2g/kg
Oregano 1g/kg
Chilli Flakes 2g/kg (Remove for sweet 6g/kg for spicy)
Binder 10g/kg
Water 100g/kg
Note if adding wine ect.
Wine 20g/kg
Water 80g/kg
Fresh Pork 85/15 to 70/30
Stuff into 29/32mm hog casings

This process has been mastered over the years, resulting in an absolutely delicious Italian Sausage.

I actually used a brand called Muraca - it's imported from Italy, but difficult to find
TO YOUR GROUND PORK, ADD:
► 4.5 gms (0.159 oz) of salt/lb of meat
► 1.5 gms (0.529 oz) of black pepper/lb of meat (optional)
► 0.85 gms (0.03 oz) of hot chili flakes/lb (for medium-hot sausage) (optional)
► 2.5 gms (0.0882 oz) of paprika/lb of meat
► 0.5 to 1 gm (0.0176 oz to 0.0353 oz) of fennel seeds/lb of meat (optional)
► 25 gms (0.882 oz) of pepper paste/sauce per lb of meat (i.e. a 1-liter Jar does 35 – 40 lbs)
► 1 cup of dry red wine/10 lbs of meat (optional)
NOTES:
► 20 YDS of sausage casings, will be enough to do 25 – 30 lbs of ground meat
► The best cut of pork to use, are pork shoulder butts
► The second best cut of pork to use are whole pork shoulder (i.e. NY Shoulder)
► The third best cut of pork to use would be Picnic Pork Shoulder
► Remove any “blubbery” fat, keep “firm” fat (do not make your meat too lean – sausage needs fat)
► Use a meat grinder plate with ½ inch holes
► Mix all ingredients very well
► Fill casings so that they are firm to touch

Italian MaMa's Sausage & Peppers Recipe: (can be reduced)
2.5lbs combined - Sweet and Hot Italian Sausage
8 Peppers (any color desired)
8-10 Sweet Onions (about 1 onion per pepper)
3.5lbs Red Potatoes
Salt and Pepper to taste
EVOO
Directions: Preheat oven to 350. Coat roasting pan with EVOO, place sausage in one layer and cook up to 40/45-min. Cut peppers and onions into strips. Warm EVOO in frying pan, cook separately until tender (about 20-min for peppers, 25-min for onions). Increase oven temp to 375, chop potatoes, coat with olive oil/salt/black pepper, and place in a single layer on pan. Roast until crispy (about 45-1hr). Slice sausage and combine all cooked ingredients. ENJOY!
