Today I'm going to bake a lovely traditional Irish soda bread. My grandmother used to make it and everyone around the country used to make it. It's very fast and easy to make. You can have it in the oven in 10 minutes. It will bake in about 35 or 40 minutes.

Start with Large bowl and a sieve. Place flour in the sieve, then baking soda, and a pinch of salt. Sieve flour into bowl. Make a little well in the centre of the flour.
Then add 14 oz of buttermilk. Only putting 12 oz of buttermilk at first, stir from the outside in, work into middle, until mixed to a soft dough. Add remaining buttermilk.
Takes about 1 minute to bring to the consistency, anybody can make this, nobody should be hungry. This will be delicious with lovely soup, or anything really, maybe with some nice cheese and ham or just as lovely toast.
Place into hand and shape into round shape. Then place on tray. flatten it out a small bit and place Cross in the middle. 1 inch high.
????Preheat oven 200 degrees centigrade or 350 degrees F or gas mark 3.
????????Leave for 35 to 40 minutes or till nice and golden. Top Tip... Tap to make sure hollow sound.

It is a rustic bread but it's very delicious. It's lovely with butter or jam or which ever way you like it????????????

Grandma Kitchen's Pumpkin Bread Recipe
Regina's Tea Time - Baking edition.
Grandma Kitchen's Pumpkin Bread;
Mix - 3 cups sugar, 1 cup oil, 1 can 15oz pumpkin, 4 eggs.
Seperately mix 3& 1/2 cups flour, 2tsp baking soda, 2tsp salt, 1tsp baking powder, 1tsp nutmeg, 1tspallspice, 1tsp cinnamon, 1/2tsp ground cloves, 1tblsp pumpkin pie spice.
Then add flour/spice ingredients a little at a time to your pumpkin, sugar
ingredients.
Mix all ingredients until there are no lumps. (add a little water as needed to thin the mixture.)
Then pour the mix into bread pans and bake at 350 for 1 hour or until done.

Traditional Irish Brown Soda Bread with a Modern twist
Recipe: Metric
250g wholemeal/wheatmeal flour (coarse)
200g plain (all purpose) flour
1/2 tsp bicarbonate of soda/bread soda
1 tblsp jumbo rolled oats
1 tblsp flax seed (milled
1 tblsp wheat bran
1 large egg (preferably) organic or free range
3 tblsp olive oil (best quality)
250-300ml/10 ozs. Buttermilk/sour milk
Recipe: US Cups
2 Cups wholemeal/wheatmeal flour (coarse)
1 1/2 Cup plain white flour (all purpose )
1/2 tsp bicarbonate of soda/bread soda
1 tblsp jumbo rolled oats
1 tblsp flax seed (milled
1 tblsp wheat bran
1 large egg (preferably) organic or free range
3 tblsp olive oil (best quality)
250-300ml/10 ozs. Buttermilk/sour milk
Method:
First preheat the fan oven to 220 degrees centigrade or 425 degrees Fahrenheit or Gas MK 7.
In a large bowl, mix the dry ingredients together. In a smaller bowl, beat egg, olive oil and buttermilk together. Make a well in the centre of the dry ingredients, add most of the liquid and stir with a fork until combined.
Sprinkle a little plain flour on your hands, around the bowl and the baking tray. Using your hands shape into a round to 5cm/2 inches deep approx. place on a baking tray. Using a butter knife cut a deep cross on the bread and bake on the middle shelf of a preheated oven for 40 minutes approx. Test after 35 minutes by tapping the base of the bread, it should sound hollow and look nicely browned. I ❤️ comments. Christine’s Baking Tip:
To make your own sour milk, have fresh milk (full fat) at room temperature and add 1 lemon juiced to it. Leave it for approx 2 hours or overnight.
Serving suggestions:
Irish Soda Bread is best eaten fresh after cooling down or the next day.
For breakfast I serve this brown bread with an “Irish Breakfast” as a treat. It’s also delicious with Seville marmalade or homemade raspberry jam or cheese or with a boiled egg.
For a fast lunch It’s good lightly toasted with avocado, cottage cheese and small tomatoes in halves with a little olive oil drizzled on top and some freshly cracked pepper and a pinch of salt.
