Ingredients you'll need:
• 1 - 16oz Bag of Dried Great Northern Beans - Any Brand Will Do
• 4 -7 Slices of Bacon ( I USED 7 SLICES) KEEP IN MIND THAT YOU WILL NOT NEED TO ADD AS MUCH SALT WHEN COOKING WITH BACON
• 1 - Tablespoon Pepper
• 1-2 - Teaspoons Salt
Instructions:
• Pour your 16oz bag of great northern beans in a colander
• Go through your beans Dry Picking to remove any rocks, deformed or shriveled beans that were missed during the packaging process
• Once you have dry picked your beans, you will want to rinse them. While your rinsing the beans this is your chance to go through them once more to see if you missed any of the bad beans
• Pour cleaned and picked beans into a pot
• Fill the pot with water - Careful not to add too much water so when your beans begin to boil, the water will not bubble over the pot
• If there are any floating beans in your pot, remove them. These beans are the remainder of the bad ones that weren't taken out in the beginning
• Add your salt, pepper & bacon
• Turn your stove eye on high until the water in the pot begins to boil
• Once the water is boiling, turn down the temperature to a medium/low
• Add a lid to the pot once the water is boiling at the desired temperature
• After one hour, check your beans to see if any water is needed. If not, come back every 30 - 60 minutes to check - You will more than likely need to add water at some point during the cooking process. Stirring beans frequently.
• Add water if needed - Not too much as there is a point in the cooking process when the beans no longer absorbs the water - I like my beans with some soup gravy for cornbread dipping
• Continue to check on your beans every 30 minutes until the desired consistency is achieved
• Total cook time can range from 3 - 4 hours depending on your preference of bean constancy
• Serve when ready
• Refrigerate leftovers
ENJOY!

Pasta Grannies makes tagliolini and beans from Abruzzo!
This week's star is Ada Fafone, who shares her recipe for a thick pasta soup called 'tajarini fajur' in the local Abruzzo dialect, or tagliolini e fagioli.
One of Ada's herbs is her homemade rosemary powder: she dries rosemary twigs, strips the needles and blitzes them in a spice mill.
89yr old Adriana makes an easy beans with 'strozzapreti' pasta ! | Pasta Grannies
Strozzapreti are twisted ribbons and Adriana likes to serve them with beans. Pasta and beans is a great combo and countless variations exist in Italy. You can make this vegetarian by using olive oil instead of 'lardo', which is cured bacon fat. Borlotti are the same as cranberry beans in America.
For the pasta: 300g wholewheat or ordinary plain flour, 1 egg, and about 85ml of water (it will depend on the flour). For the sauce: 50g lardo, bacon fat, or extra virgin olive oil, one onion, 400g soaked borlotti beans (whisper it, they could even come from a jar), 400g bottled or tinned tomatoes (make them good quality), salt.
Pasta Grannies enjoy Calabrian beans, greens and 'stranguggi' pasta!
Farmer Elisabetta, or Bettina, makes this hearty, veggie-tastic dish with a ridged cavatelli shape pasta she calls 'stranguggi'. The leafy greens can vary according to what is in season; and the white cannellini beans are a special variety called 'cannellina bianca di Cortale'. If you can get hold them, great; if not use whatever is local to you.
300g dried, white cannellini beans. Soak for a few hours and then cook gently for 100minutes or so.
2 sticks celery, including the leaves,
1 large onion
plenty of olive oil
1 kilo of leafy greens: chicory, Swiss chard and cabbage, for example.
1 bottle 400ml tomato passata
200g semolina flour 100g soft wheat flour (all purpose, ordinary, no need for 00) and about 150ml of water
salt
Serve peperoncino/chilli pepper at the table
Discover rice & beans 'panissa' from northern Italy! | Pasta Grannies
Rice and beans is Maria Rosa's speciality; but not just any old rice and beans. This dish is special. You need ingredients from the rice growing area of Piemonte: two types of fresh salami, risotto rice (she uses carnaroli) and borlotti beans. It's almost impossible to find fresh salami beyond Piemonte, so if you feel inspired use top quality, meaty pork sausages instead. The recipe can be found over on the Pasta Grannies website:
PS Maria Rosa will also appear in Jamie Oliver's forthcoming TV series 'Cooking with Nonnas'. She remembered him very vaguely; it took a while to work out who a British chef she called 'Omar' was - then we found the photo of the two of them!
