GREEN BEANS RECIPE
1.5 pounds (675g) green beans trimmed
2.5 teaspoon Kosher salt divided
2 tablespoons (30ml) extra virgin olive oil
½ cup (35g) sliced almonds
1 shallot minced
1 garlic clove minced
½ teaspoon black pepper
grated zest of 1 lemon
2-3 wedges fresh lemon
Bring a large saucepan of water to a boil with 2 teaspoons salt. Add the green beans and cook 2-3 minutes, until they turn bright green. Drain, then immediately rinse under cold running water to stop the cooking. Drain again.
Heat the oil in a large (12-inch) non-stick skillet over medium-high heat. Add the almonds, stirring to coat with the oil. Add the shallot, garlic, pepper, and ½ teaspoon salt. Cook, stirring frequently, until the shallots become softened and the almonds are toasted, about 5 minutes.
Add the green beans to the skillet, using tongs to toss them with almond mixture. Cook for 2-3 minutes, until heated through. Then, transfer the green beans to a serving bowl. Sprinkle with the lemon zest and serve with the lemon wedges.
NOTES
The green beans can be parboiled up to 3 days ahead. Store in the refrigerator until ready to cook.

Easy Green Beans Almondine is a Healthy and Fresh Side Dish
Sauteed green beans never tasted so good! This recipe is so easy to make, making it perfect for a beginner cook. Easy Green Beans Almondine is a great holiday side dish that goes with turkey, ham, roast beef and more!

Ingredients
▢1/4 cup butter, divided
▢1/2 cup sliced almonds
▢1/4 cup shallots minced
▢2 garlic cloves, minced
▢1 pound green beans, trimmed and washed
▢kosher salt and pepper to taste
▢juice and zest of one lemon
▢2 tablespoons chopped fresh parsley
Instructions
Bring a large pot of water to a boil over medium high heat.
Season the water, liberally, with kosher salt and then add the green beans.
Blanch the green beans for 3-4 minutes or until they are crisp tender. (They need to be slightly undercooked since they'll finish cooking in the skillet.)
Using a slotted spoon, transfer the green beans to an ice bath (a bowl of cold water with ice) to stop the cooking process. (You can do this step in advance and store in an airtight container for up to 24 hours in the refrigerator.)
Melt 1 tablespoon of butter in a skillet over medium heat.
Add the almonds to the pan and cook for 3-4 minutes or until golden brown, tossing occasionally to prevent burning.
Remove the almonds from the pan and wipe the pan clean with a paper towel.
Melt the remaining butter in the pan. Add the shallots and garlic. Cook for 2-3 minutes.
Add the green beans and toss with the shallots. Cook the green beans, stirring occasionally, for an additional 3-4 minutes.
Stir in the lemon juice, lemon zest, salt and pepper.
Sprinkle the almonds over the green beans and garnish with parsley.
Serve immediately.

This green bean almondine recipe is a delicious, light side dish that pairs with any hearty meal. Try it for yourself!

Ingredients
Servings: 8
2 lb green beans, trimmed
1/2 cup(s) sliced almonds
2 tbsp unsalted butter
2 tbsp extra virgin olive oil
2 large yellow onions, sliced thinly
Chicken broth or water, as needed
Kosher salt and freshly ground pepper
1 tbsp fresh thyme leaves, chopped
Directions 10 steps | 45 Minutes
Step 1
To begin this green bean almondine recipe, first prepare a large bowl with iced water. Bring a large pot of salted water to a boil. Then add the green beans to the boiling water and cook for about 3-4 minutes or until the beans are crisp-tender.
Step 2
Next, drain the green beans and move them to the prepared ice water.
Step 3
Remove the green beans from the ice water and gently pat dry. Reserve the beans for later.
Step 4
Then in a large saucepan over medium heat, add the sliced almonds. Toast the almonds until golden brown. This will take about 3-5 minutes. Next, transfer the almonds to a bowl and remove and set aside.
Step 5
For the next step, add butter to the same saucepan and melt over medium heat.
Step 6
Now add the olive oil and a handful of the sliced onions. Cook the onions until they are soft. This will take about 1-2 minutes. Then add another handful of onions. Repeat these steps until all of the onions are added to the saucepan. Reduce the heat to medium-low and cook the onions, stirring constantly so the onions cook evenly. Then season the onions with salt and pepper.
Step 7
Cook the onions for about 20-25 minutes or until they appear dark brown. While cooking, if there are any spots on the skillet where the residue of the onion is starting to burn, deglaze the area with chicken broth or water. Add the thyme and cook the mixture for about 3 minutes. If you do not have fresh thyme, you can substitute ½ teaspoon of dried thyme.
Step 8
Now, you can add your reserved green beans to the skillet and saute them until warmed through. This will take about 3 minutes.
Step 9
Reserve 2 tablespoons of the toasted almonds and add the rest of the almonds to the green bean almondine mixture and mix thoroughly. Season your green bean almondine with salt and pepper to taste.
Step 10
Plate the green bean almondine and garnish the top with your reserved almonds. Enjoy!
