Stir-Fried Green Beans with Black Beans

This Asian stir fry features three types of beans: black beans, green beans, and a black bean sauce. While black beans aren't a typical Asian stir fry ingredient, they are complemented perfectly with the rich and flavorful black bean sauce. Black bean sauce is made from fermenting black soybeans, a process that gives the beans a sharp, pungent, and umami-rich flavor.
A vegan vegetable medley with fermented black bean in 4 minutes
RECIPE
Cooking time: 4 min
INGREDIENTS
1 tbsp of minced garlic
2 tbsp of canola oil
10 slices of carrots - thinly sliced
1 cup of broccoli - cut to bite size
1 cup of green beans - cut diagonally lengthwise
1 cup of zucchini - cut to bite size in irregular shape
SEASONINGS
2 tbsp of fermented black bean (douchi) - the semi-dry type
1 tbsp of oyster sauce (use vegetarian oyster sauce for vegan diet)
1 tbsp of hoisin sauce
INSTRUCTION
1. Saute 1 tbsp of garlic in 2 tbsp of canola oil.
2. Add sliced carrots and stir-fry for about 10 sec.
3. Add broccoli and stir-fry for about 5 sec.
4. Add green beans and stir-fry for about 5 sec.
5. Add 1 cup of zucchini and stir-fry for about 30 sec.
6. Add 1/4 cup of water to steam the vegetables.
7. Steam vegetables for 1 min with regular mixing.
8. Add more water as needed.
9. Add 1 tbsp of oyster sauce when the dish is almost cooked.
10. Add 1 tbsp of hoisin sauce.
11. Cook to condense the sauce.
12. Dish is ready to serve.
