How To make Grilled Beef Tenderloin w/ Chipotle Sauce & Asadero Cheese
12 ounces Cacique brand Asadero cheese
6 8 oz. beef tenderloin steaks
3 tablespoons butter
Chopped cilantro for garnish
optional ***Chipotle Sauce*** 15 Roma tomatoes
3 medium onions :
sliced 1/2" thick
3 tablespoons garlic minced
2 teaspoons dried oregano
2 cups cilantro :
chopped
3 limes juice of
5 Chipotle chilies in adob :
canned
salt and pepper -- to taste
Prepare the Chipotle Sauce in advance. On a BBQ, grill the tenderloins over a w hite ash fire, to desired doneness (for best results the BBQ should be covered or closed, to act as an oven). Heat the sauce through and whisk in the butter. Place a slice of Asadero cheese over each tenderloin and allow to melt. Place m eat on serving tray and pour sauce over the top of the meat. Sprinkle with Coti ja, and garnish with the cilantro.
Chipotle Sauce Toss the tomatoes in vegetable oil and preferably grill the onions and the toma toes, over Mesquite coals. The tomatoes should have charred skins (if not grill ing, char tomatoes skins in a very hot skillet and then add the onions with som e vegetable oil to a hot sauce pan) Add garlic and continue to cook for about 2 mins. Add the oregano, cilantro, and the chilies, which have been rinsed and c leaned of their veins, and seeds and cook slowly, covered, for about 20 minutes . Let cool and then puree in the blender, adding the lime juice and salt and pe pper to taste. For spicier sauce, add some of the adobo from the canned chilies .

Cilantro Rice
3 Cups Basmati Rice
3 Cups Water
1 Bay Leaf (in the water)
Pinch of salt
Juice of 1 Lime
Juice of 1 Lemon
4Tbsp Butter
4Tbsp Chopped Cilantro

Beef Bean and Cheese Burrito Recipe - Awesome Mexican Food
Ingredients:
2 pounds beef roast
1 small white onion chopped
3 cloves garlic chopped
16 oz. refried beans
1/2 cup salsa
1 tablespoon taco seasoning
1/2 teaspoon cayenne pepper
1/2 teaspoon white pepper
Flour tortillas burrito size
Grated cheddar or mexican cheese blend
Avocados if you like
Oil for cooking
Preparation:
1. Sautee onion and garlic
2. Add roast, brown on all sides
3. Add water to the top of the roast and cover. Simmer for 3 - 4 hours until very tender.
4. Transfer roast into skillet and break apart
5. Add 3/4 cup broth
6. Add taco seasoning
7. Simmer for 10 minutes covered
8. Add 1/2 cup salsa, mix well
9. Heat cheese for 1 minute on tortilla in microwave
10. Fold in meat beans and avocado.
11. Grill on skillet with melted butter

Mexican Shredded Beef Recipe for Enchiladas Burritos Nachos Tacos
INGREDIENTS
3-4 pound beef chuck roast
1 seeded finely diced jalapeno
1 sliced bell pepper
1 large sliced onion
salt & pepper
oil
1 can Rotelle - tomatoes/green chilies
1 cup salsa
1 cup enchilada sauce
1 cup refried beans
4-5 cloves sliced garlic
1 minced chipotle pepper
1 tbsp. dried onion flakes
1 tbsp. chili powder
1 tbsp. paprika
1 tbsp. oregano
1/2 tsp. black pepper
1 tbsp. cilantro or parsley
Season beef roast with salt and pepper.
In a cast iron pan add a couple tbsp. oil
and beef roast. Brown off each side for 3-4 minutes.
Mix all other ingredients together in a bowl and mix
well.
In slow cooker add roast and juices and Mexican
seasoned mixture. Cover and cook for 4-5 hours until
falling apart.
Remove beef and let rest for 20-30 minutes and then
shred. Add beef back into sauce and mix well.
You can portion and freeze.
Use for enchiladas, burritos, tacos or nachos or even
over rice.
Enjoy.

Smoked Barbacoa Burrito Recipe on the Traeger | ubbq
Barbacoa Burritos made with 6 hour long smoked beef chuck roast on the Traeger tailgater.
Barbacoa Beef Directions:
1-set smoker for 225°
2-rub 3 lb chuck roast with chipotle seasoning
3-smoke roast at 225° for 2 hours
4-make barbacoa marinade:
1 whole onion
4 garlic cloves
14 oz beef broth
1/3 c apple cider vinegar
8 oz chipotles in adobo sauce
2 tbs lime juice
Blend everything well in food processor
5-after 2 hours of smoke, add roast to pan with marinade
6-cover pan with tin-foil and put back on smoker at 225° for 3 more hours
7-after 5 total hours of cook time, shred roast
8-add roast back to marinade and smoke uncovered at 225° for 1 more hour
9-serve on burritos, fajitas, tacos, nachos, and more.
