How To make Grilled Pork Tenderloin
1 1/2 lb Pork tenderloin, fat and
-sinew removed 1/4 c Dry white wine
1/4 c Olive oil
2 T Lemon juice
1 1/2 t Honey
1/2 t Tarragon
Freshly ground black pepper 1. Preheat grill. Cut pork tenderloin crosswise into 1" medallions.
Place cut side down and flatten to 1/2" thick with broad side of chef's knife or rolling pin. 2. In medium bowl, whisk together the wine, olive oil, lemon juice,
honey, tarragon and pepper. Place pork medallions in marinade. Turn and marinade at room temperature for 15 minutes or up to two hours in refrigerator. 3. When coals are ready, place medallions, cut side down, on grill.
Cook over medium heat about three minutes, or until juices rise to the surface. Turn and grill on other side three or four minutes, or until no longer pink. Serve immediately.

Garlic and Herb Crusted Pork Loin on the GRILL
Pork Loin is one of the best cuts on the pig. It soaks up the flavors of whatever you put on it and the fat crisps up the outside for both an amazing flavor and texture. In this video, I make an herb crusted pork loin on the gas grill, starting with a whole loin, season it, and grill it to perfection. This one is hard to mess up as long as you hit the right final temperature. I've made this a bunch of times and it is always a hit.
How to Grill a Pork Tenderloin, which is not the same cut as a pork loin:
Herb Crust: (per pound of pork loin)
1/2 tsp salt
1 tsp Dried Italian Seasoning
1/4 tsp Garlic Powder
1/4 tsp Rosemary (if your Italian seasoning doesn't have it)
I grilled this on the Weber Genesis E-330. Sear the outside over medium-high heat for 3-4 minutes per side. Then reduce the temperature to 300-325 F. Put the Pork Loin on the top rack and cook until it reaches 140 F internal. The idea temperature is 145 F, but the temperature should continue to rise after you take it off the grill and let it rest.

Perfectly Grilled Pork Tenderloin » +Fire Roasted Pineapple Salsa
Learn how easy it is to make a delicious grilled pork tenderloin recipe that is juicy, tender, full of flavor, and cooked to perfection.
If you want a quick delicious meal, I can’t think of anything easier to make than pork tenderloin. It’s a fantastic cut of meat that is lean and delicious and goes amazingly well with the homemade pineapple salsa.
Ingredients for this recipe:
• ½ cup olive oil
• 1 heaping tablespoon cumin
• 1 heaping tablespoon chili powder
• 2 teaspoons crushed red pepper flakes
• 2 teaspoons sea salt
• 2 pork tenderloins

Serves 6
Prep Time: 5 minutes
Cook Time: 12 minutes
Marinate Time: 30 minutes
Procedures:
1. In a medium-size bowl whisk together the oil, cumin, chili powder, red pepper flakes, and salt until combined.
2. Pour the marinade in a plastic zip bag and add the pork tenderloins. Close the bag and move everything around to ensure the pork is coated.
3. Refrigerate for at least 30 minutes or overnight.
4. Place the pork on a pre-heated grill (450° to 550°) and cook for 5-6 minutes per side or until dark grill marks are achieved and the desired internal temperature is achieved.
5. Remove the pork from the grill and rest on a plate or cutting board for 3-5 minutes before slicing and serving alongside the pineapple salsa.
Chef Notes:
Make-Ahead: While this is meant to be eaten as soon as it comes off the grill and is sliced, you can make this an hour ahead of time while keeping warm in an oven at 165°. You can only do this if you prefer the pork tenderloin to be well done internally.
How to Store: Place covered in the refrigerator for up to 4 days. This will freeze covered for up to 2 months. Thaw in the refrigerator for 1 day before reheating.
How to Reheat: Please note that reheating pork will cause it to immediately overcook. The best way to heat it up is in a pan in the oven at 350° until warmed. You can also heat it in the microwave until warm.
This pork is fantastic eaten by itself and would also go fantastic with chimichurri sauce and pesto in addition to the pineapple salsa.
It’s important to rest this pork, or any protein, after cooking to allow for the juices to soak back into it making it more flavorful.
The longer you can marinate the pork the better.

The true tenderloin runs alongside the backbone - and it's a lot smaller (and a lot more tender) than the pork loin. It's often called the pork fillet too... that's how good it is!
There are a lot of different ways to cook a pork tenderloin, but I decided go the BBQ route. I took the tenderloin and rubbed it, injected it and cook it on my grill at 250 degrees.
To start I rubbed my 4 pork tenderloins with Smokin' Guns Sweet Heat rub and then injected with Butcher's Open Pit Pork Injection mixed with apple juice.
After that, I got my BGE grill fired up, added a few chunks of cherry wood and stabilized it on 250 degrees. I didn't get too far away because these pork tenderloins are pretty small and the worst thing you can do is overcook them.
I'm shooting for an internal of 145 when it's complete - but I take them off the smoker at 138-140 internal because I'm going to get that additional degrees in the carryover when it rests.
And with this recipe, I wanted to give the pork tenderloins a mild, sweet glaze right before I took them off the smoker. So I cooked them to an internal of 130 and the brushed on The BBQ Sauce. Use any kind of sauce or glaze you want at this step, just make sure it goes with the rub and injection really well.
Once the pork tenderloins had glazed for a few minutes and they were temping between 138 - 140 internal, it's time to take them off the grill and let them rest.
After 10 minutes, it's time to slice and get to eatin'.
You can serve these tenderloins just like they are - right off the cutting board. But you can also use them for pork sliders. Either way they make a great dish for a football party or BBQ.

Grilled Pork Tenderloin Recipe Step #1
First you will begin prepping your pork tenderloin by trimming off any unwanted silver skin. Once this is done, give it a rinse under cold water and dry with paper towel. Once this is done take your BBQ rub and begin to place a medium layer of rub onto both sides of your tenderloin. When this is done, place some plastic wrap over top and put it in the fridge for 2 hours to allow the rub to marinate the meat a bit.

After 2 hours remove the tenderloin from the fridge and allow it to rest for 20 minutes to remove the chill from the fridge. While this is happening you can get your grill set up for indirect cooking between 250-275.

Once your grill is up to tempreture place your tenderloin on the grill opposite the coals and begin to cook for 30 minute. It is at this point were you will also add in your hardwood to begin smoking as well.

After 20 minutes you are going to flip your tenderloin and place some bbq sauce on top. After this has been done close the lid and continue cooking for another 10 minute or until the internal tempreture reaches 140 degrees. Once you Pork Tenderloin has reached 140 you are going to sauce the other side and then remove if from the grill to rest for 5 minutes.

After 5 minutes of resting time your pork tenderloin is now done and ready to slice up and serve.
