The Halibut is first seasoned with a mixture of cumin seeds, coriander seeds, ginger, garlic, chili, turmeric, paprika, and haram masala, imparting deep and complex flavors.
Ingredients:
18 oz halibut fillet
2 tsp cumin seeds
2 tsp coriander seeds
1.06 oz ginger
3 cloves of garlic
1/2 tsp chili
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp haram masala
1 tablespoon tomato puree
Groundnut oil, as needed
7.05 oz yogurt
2 cucumbers
2 lemons
Salt, to taste
Pepper, to taste
Directions:
00:01 Use Halibut for its seasonality, flavor, and rich protein content; skin and slice it into slabs.
00:27 Place halibut in the fridge to firm up before marinating.
00:39 Prepare a tandoori spice paste using ginger, garlic, cumin, coriander seeds, and warm spices.
01:07 Incorporate lemon and tomato puree into the paste to create a vibrant, sharp flavor that's fresher than store-bought.
01:22 Marinate the Halibut in a mixture of yogurt, spice paste, and lemon, lightly sweetened with sugar.
01:50 Cook the marinated Halibut in a hot pan with groundnut oil, approximately 2.5-3 minutes per side.
