How To make Hearty Latin Stew
1 cup brown rice
1/2 cup bulgur
16 ounces chickpeas, canned
4 ounces chili peppers, canned
diced
8 ounces string beans
12 ounces corn
16 ounces stewed tomatoes
1 teaspoon chili powder :
or 2
dash tabasco sauce
Cook brown rice and bulgur together.
Heat together in a large pot string beans, chiles, chili powder and hot sauce. Mix in the remaining ingredients. Simmer for 15-30 Minutes.

Caldo de Res (Mexican Beef & Vegetables Soup) | A year round dish and easy recipe
Ingredients:
3-4 lb of beef shank with bones
1 garlic head
1 onion
1 celery stick
2 tbsp salt
1 tbs of beef bouillon
3 corn on the cob
2 carrots
2 potatoes
2 jalapenos
1/2 cabbage
small bunch of cilantro
2 zucchinis
Serve with Mexican rice on the bottom, and add a squish of lime

This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste
The BEST Asopao de Pollo | Puerto Rican Chicken Soup
Asopao de Pollo Ingredients:
•4-5 dark meat chicken pieces (seasoned with Adobo, annatto, garlic, etc)
•1oz cooking ham
•2tbsp olive oil
•2oz Sofrito
•1/4 cup tomato sauce
•2 garlic cloves
•1/2 packet Goya sazón w/ culantro y achiote
•1 chicken bouillon
•1/2 cup of mixed peppers/onions of your choice
•1/2 chopped carrots
•1/4- 1/2 cup rice
•2oz-4ozyuca root (cassava) or potato
•6 cups water (a lil more if needed)
•Salt to taste
•cilantro and limes for garnish & taste

Tip!!! If you cut you vegetables smaller, make sure you add them a little after I did so they don’t fall apart
I M P O R T A N T ⚠️
After removing the scum(impurities from meat) reduce heat to medium/low this is very important so you don’t overcook the vegetables
Ingredients:
2 lbs beef ribs
2 lbs beef shank
2 lbs beef roast
1 onion
1 garlic head
5- 5 1/2 qt of water
Salt I used 4 1/2 tbsp
1 tbsp beef bouillon(optional)
1 tbsp tomato bouillon
**add all of your favorite vegetables**
4-5 corn
4-5 golden potatoes
5-6 carrots or 1 lb baby carrots
1/2 lb green beans
2 chayotes
2 Mexican squash
Bunch of cilantro
1 cabbage head
