2 lbs boneless skinless chicken breast
16 oz baby Bella mushrooms
4 Tbsp unsalted butter
half of a small onion
3 cloves garlic minced
salt and pepper to taste
1 Tbsp fresh rosemary
1 Tbsp fresh thyme
1 Tbsp fresh parsley
1 Tbsp fresh chives
3 cups (24 oz) heavy cream
2 oz grated parmesan cheese
CHICKEN SEASONING
1 tsp lemon pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 to 1/2 tsp salt
VINAIGRETTE
2 tbsp lemon juice
2 tsp Dijon mustard
2 tsp maple syrup (or honey)
2 tbsp olive oil
salt and pepper to taste

Ingredients:
for the rolls:
chicken breast - 400 g (14 oz)
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
prosciutto - 6 slices
tomatoes - 6 slices
mozzarella - 150 g (5.3 oz)
basil - 20 g (0.7 oz)
for breading:
milk - 100 ml (3.4 fl oz)
eggs - 1 piece
salt - 5 g (0.18 oz)
black pepper - 2 g (0.07 oz)
bread crumbs - 100 g (3.5 oz)
olive oil - 20 ml (0.7 fl oz)
IN THE OVEN 180 °C (356 °F)/30 minutes

MOZZARELLA CHICKEN is easy to make one-pan low-carb dinner that is ready in less than 30 minutes.
Mozzarella chicken is easy to make one-pan low-carb dinner recipe that is ready in less than 30 minutes. Pan seared chicken smothered in rich homemade tomato based sauce and molten melted mozzarella cheese. A meal that entire family would love!
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4 servings
Ingredients
4 boneless chicken breasts
1 tablespoon Italian seasoning
1 ½ teaspoon smoked paprika
1 teaspoon onion powder
Salt & pepper to taste
2 tablespoon olive oil
1 yellow onion, chopped
2 cloves garlic, minced
1 15 oz can crushed tomatoes
1 tablespoon tomato paste
1/2 teaspoon red chili flakes
¾ cup mozzarella cheese
Fresh parsley for garnish
Instructions
Season chicken breast with salt and pepper, Italian seasoning, onion powder, smoked paprika. Rub the spices to spread evenly. Season on both sides.
Heat olive oil in a skillet. Cook chicken breasts on medium heat until browned and cooked through on both sides (about 3-5 minutes each side). Transfer seared chicken to a plate, set aside.
To the same skillet add about 2 teaspoon more olive oil if it’s too dry. Cook diced onion in the same pan until translucent scrapping the brown bits from the bottom of the pan while cooking.
Add minced garlic and cook till garlic is fragrant. Pour the juices oozed by browned chicken in the plate.
Add crushed tomatoes, tomato paste and red chilies flakes, stir to combine. Simmer and cook until tomato sauce is thickened (about 5 minutes).
Season sauce with salt and pepper to taste.
Nestle seared chicken breast into the thickened tomato sauce.
You can cover chicken breasts with a spoonful of tomato sauce.
Top each chicken breast with 2 to 3 tablespoon of mozzarella cheese (you can use mozzarella cheese slices instead of grated cheese).
Transfer skillet to pre heat oven set to broiler settings. Broil for 2-3 minutes until cheese is molten, browned, hot and bubbly.
Garnish with fresh parsley.
Serve immediately with spaghetti or with crusty bread and a salad.

2 tbsp. olive oil, divided
3 medium chicken breasts
1 tsp. Italian seasoning
kosher salt
Freshly ground black pepper
3 cloves garlic, minced
1 tsp. chopped fresh thyme

1 1/4 c. freshly grated Parmesan
1 tsp. lemon zest
1 tsp. parsley, for garnish
DIRECTIONS
1. Season chicken generously on both sides with salt, pepper and Italian seasoning.
2. In a large skillet over medium heat, heat 1 tbsp oil. Add chicken and cook until golden and no longer pink, 8 minutes per side.
3. Remove chicken from pan and add the remaining olive oil. Add garlic, thyme and rosemary and cook until fragrant, 1-2 minutes.
4. Add milk, parmesan and lemon zest and whisk to combine. Season with salt and pepper and bring to a simmer. Return chicken to the skillet and let simmer until the sauce has thickened slightly, 2-3 minutes. Baste the chicken with the sauce, garnish with parsley and serve.
