1 c Dry quinoa
1 cn Peeled cut tomatoes
1 cn Beans (I've used pinto,
Black, and kidney) 1 cn Hominy
x Spices - I use garlic, Onion, parsley, basil, Thyme Cook quinoa w/ 2 cups water. Add tomatoes, beans, hominy and spices and keep on low heat until all is hot. ????Easy chickpea pozole verde recipe with vegan pork

7 tomatillos- remove husks + rinse clean
3 garlic cloves
1 serrano pepper + more to taste
2 wedges of onion
Sprig of cilantro split into two bunches
Handful of spinach
1/4 tsp salt
2 tbsp vegan bouillon + more to taste (Or in place of the bouillon in water you can use 7 cups of vegetable broth)
7 cups of water + 1 cup for the sauce
1-1/2 tbsp oil + more for to fry the enoki mushrooms
4 cans of chickpeas -drained and rinsed (I combined 3 cans of chickpeas with 1 cup of hominy)
(Save 2 tbsp of chickpeas/hominy to blend into green salsa)
In a small sauce pan over a medium flame boil the tomatillos and serrano pepper.
2 minutes after they come to a boil reduce the flame to low, cover and cook until tender. Be sure they do not burst, they could become bitter if they do.
In the mean time, as the tomatillos cook.. add 7 cups of water to a large pot over a low medium flame.
Along with 1 wedge of onion, 1 garlic clove and a few cilantro leaves. Also add the vegan bouillon, chickpeas/hominy.
Going back to the tomatillos, when they are tender turn off the flame and place them into your blender cup.
Along with the serrano pepper, dry oregano, 2 tbsp of chickpeas or hominy, 1 wedge of onion, 2 garlic cloves,
Small sprig of cilantro, handful of spinach, 1/4 tsp salt and 1 cup of water. Blend until smooth.
Next add 1-1/2 tbsp of avocado oil into a saucepan over a medium flame. Pour the blended green salsa into the hot oil. Fry for 2 minutes or until it comes to a roaring simmer/boil.
The next step is to pour the fried salsa into the simmering broth, *remove the wedge of onion, garlic clove and cilantro leaves from the broth before pouring the green salsa.
Mix to incorporate all of the ingredients. Place a lid over the pot and raise the flame to a medium high, cook for 10 more minutes or until it comes to a roaring simmer/boil. Turn off flame and serve.
Fried enoki
You will need:
Enoki mushrooms -cut 1-1/2 inches off the bottom, separate into smaller pieces just like in the video
Vegetable oil
Seasoning salt
Heat a pan over a medium high flame, add enough oil to fry the enoki, once its hot add the enoki mushrooms, fry on both sides until they become crispy and golden brown. Remove from heat, absorb excess oil with a paper towel and season with seasoning salt to taste.

CHILE BROTH:
- 2 CASCABEL OR CHILE GUAJILLOS (DESEEDED AND BOILED).
- 1.5 CUPS OF THE WATER USED TO BOIL THE PEPPERS
- 1 GARLIC CLOVE
- SALT TO TASTE
- BLEND ALL INGREDIENTS
SOUP:
- ABOUT 8 CUPS (1800ML) OF WATER
- 2 TO 3 CUPS OF CHOPPED MUSHROOMS OF YOUR CHOICE
- 2 CUPS OF WHITE HOMINY
- POUR THE CHILE BROTH (ADD AS MUCH AS YOU WANT).
TOPPINGS:
- OREGANO
- RADISH
- ICEBERG LETTUCE
- LIME
- AVOCADO
- TOSTADAS
SALSA:
- ABOUT 10 CHILES DE ARBOL (BOILED)
- .5 CUPS OF WATER (SAME WATER USED TO BOIL THE PEPPERS)
- BLEND ALL INGREDIENTS

INGREDIENTS:
½ PKG of White Fungus Mushrooms (Also called Snow Fungus) can be found at asian food markets
6 cups veggie broth
2 cups water
1 30 oz can of hominy
½ yellow onion diced
2 cloves garlic
1 TB salt
1TB oregano
1 tsp cumin
6 TBs Menudo mix
***OR***
4 Chiles de Guajillo
4 Chiles de Ancho
4 Chiles de Arbol
Take 2.5 ounces of White Fungus Mushrooms (about 3 large dried mushrooms) and soak in cold water for 30 min. Drain and cut into bite size pieces (keep in mind that the mushrooms will expand while cooking. Set aside. Prepare your broth (methods 1 and 2 below) and add hominy. Bring to a boil and then simmer for 1 hour. Add mushrooms 20 min before serving.
Broth Method 1
5 Chiles de Guajillo
4 Chiles de Ancho
4 Chiles de Arbol
6 cups veggie broth
2 cups water
1 TB salt
1TB oregano
1 tsp cumin
Cut the stems off of each chili and empty out the seeds. Dry roast the peppers. DO NOT BURN! Soak the chilis in boiling water for 25 min. Drain the chilis and blend with 2 cups of veggie broth. Saute the onions and garlic in olive oil until translucent, add the chili mixture along with the veggie broth, water, and spices.
Broth Method 2
6 TBS Fiesta Menudo Mix (buy it at HEB or online here )
6 cups veggie broth
2 cups water
1 TB salt
1TB oregano
1 tsp cumin
Saute onions and garlic until translucent. Add veggie broth and water. Add 6 TBS Fiesta Menudo Mix and remaining spices.

Ingredients
5 cups water + extra for boiling chilis and soy (Total water needed 13 cups water)
8 to 10 guajillo chiles
2 1/2 cups white or yellow hominy
1 cup soy meat/soy curls
4 bay leaves
1 Tbsp Mexican Oregano
1/2 medium white or yellow onion + 1/2 chopped onion
1 small garlic bulb (6 to 8 garlic cloves)
5 Tbs bouillon of choice (See tip below and end of the video)
Topping options- chopped cabbage, lettuce, cilantro, pepper flakes, or lemon
Bouillon TIP
*I used a blend of 3 Tbsp “Lee Brand vegetable broth mix” & 2 Tbsp “Orrington Farms broth base & seasoning” for BEST flavor
-I recommend combining your favorite veggie seasonings and make it comfortable for your home
-veggie broth seasonings will require 1 Tbsp per 1 cup water (Please adjust as needed)
-taste broth after 15 minutes of boiling, adjust veggie broth seasoning 1/2 Tbsp at a time, and continue to boil until you achieve desired flavor.
-Once you achieve the desired flavor add soy+ Mexican oregano
-Boil chilis in 4 cups hot water till soft (8 mins)- save 1 cup chili water for blending
-Boil soy meat in 4 cups hot water for 4 mins
