How To make Impossible Beef Enchilada Pie
1 lb Ground Beef
1 c Onion; chopped
2 Cloves Garlic; Chopped fine
2 ts Chili Powder
1/2 ts Dried Oregano
1/2 ts Salt
1/4 ts Pepper
8 oz Enchilada Sauce
2/3 c Tortilla Chips; Crush Fine
2 c Cheddar Cheese; Shredded
1 1/4 c Milk
3 Eggs
3/4 c Bisquick
Heat oven to 400~. Grease 10" pie plate. Brown hamburger with onions, then drain grease. Stir in garlic, chili powder, oregano, salt, pepper and 1/2 C of Enchilada sauce. Sprinkle crushed tortilla chips evenly in the pie plate. Top with 1-1/2 C of the cheese; spread with meat mixture. Beat milk, eggs and Bisquick until smooth, 15 seconds in blender on high. Pour into pie plate. Bake until knife comes out clean, 25 to 30 minutes. Spread remaining sauce over top, sprinkle with remaining cheese. Bake until cheese is melted, 3-5 minutes longer. Cool 10 minutes before serving. Can top with sour cream if desired.

My Recipe for Mexican Cornbread Casserole - One Pot Meal that's Easy to Make
I am on this Mexican Food kick and just had to put this Mexican Cornbread Casserole together and give it a try. Gosh it was easy and so so good. You have to try this for your family.

Mexican Cornbread Casserole Ingredients
2 pounds ground beef or ground chuck
1/2 lg red onion diced
1-2 pks of Taco Seasoning Mix
1-2 cups water
1 15 oz can Petite Diced Tomatoes
1 15 oz can Tomato Sauce
2 cups frozen corn
1 can black beans rinsed and drained
Jalapeno Slices to your taste
1 Tbsp Chicken Bouillon
1/2 Tbsp Coarse Ground Black Pepper
2 boxes Jiffy Corn Muffin Mix (Prepared together)
1 small can green chiles
1 cup cheese or to your taste
Bake at 400 degrees for 35 minutes then add your cheese and bake for another 10-20 minutes until cheese is melted through.

You'll Need:
- 7 tortillas
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 lb chicken breast
- 1 red onion
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp cayenne pepper
- 1 tsp salt
- ⅓ cup olive oil
- 4 oz shredded monterey jack
- 4 oz shredded cheddar
- 1 bunch of scallions, sliced
- 1 green chili pepper, sliced
- 1 tomato, diced
- 1 tbsp cilantro
Extra:
- 10.5 or 12 cast iron skillet
Here's How:
1. Preheat the oven to 400°F. Core the bell peppers and cut them into strips. Peel the onions and cut them into strips, as well as the chicken breasts. Put everything in a bowl, add paprika, salt, cayenne pepper, cumin, and olive oil and mix well.
2. Pour the marinated chicken and vegetables into a casserole dish and cook for 15 minutes.
3. Brush a cast iron skillet with olive oil and line it with 6 tortillas, as shown in the video. Sprinkle half of the cheddar and Monterey jack cheese over the tortilla in the middle of the pan.
4. Spread the cooked chicken fajitas over the cheese.
5. Add the diced tomatoes, scallions, chili pepper, and cilantro and sprinkle the remaining cheese on top.
6. Place the last tortilla on top and fold the overlapping tortillas towards the middle of the pan. Put the skillet in the oven and cook at 350°F for 40 minutes.

Recipe for home made Bisquick mix:
Small Amount:
1 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 Tbs Butter
Mix thoroughly.
Large amount
6 cups all purpose flour
3 Tbs baking powder
1 1/2 tsp salt
6 Tbs butter
Mexican Impossible pie recipe:
1/2 c biscuit mix
4 eggs
2c. milk
1c frozen sweet corn, thawed
1 small onion, finely chopped
1/2 c grated cheddar cheese
1c browned ground meat
1Tbs chili powder
1tsp cumin
1/2tsp garlic powder
hot pepper to desired amount
1tsp salt
Mix all ingredients. Bake in 400 degree oven for 30 minutes.

INGREDIENTS
2 boxes of Jiffy Cornbread mix
2 large eggs
1/2 cup sour cream
1/2 cup green chiles (optional)
1/2 to 2/3 cup whole milk
1 lb lean ground turkey or beef
1 oz envelope of taco seasoning
1/2 tsp smoked paprika
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
8 oz Colby Jack cheese (shredded)
9x13 baking dish
2 Tbsp softened butter for baking dish
• bake uncovered at 375°F for 35 minutes or until cooked
