3 tb Butter or margarine 2 c Self-rising flour Salt 1 1/2 c Mashed potatoes 1/4 c Milk Mix butter into flour; add good pinch of salt. Mix in mashed potato; pour in milk to make soft dough. Roll out on lightly floured surface; cut into rounds 3 inches across. Put on greased baking sheet; bake at 425 degrees for 15 to 20 minutes. Split; serve hot with butter. Preparation time: 15 minutes Baking time: 15 to 20 minutes

How to make Irish Potato Cakes Recipe
Irish Potato Cakes
Ingredients:
• I Ib (450g/15 oz) Potatoes, (Roosters or any potato will do). • ½ cup + 3 tbsp (110g/4 oz) Self Raising Flour/All Purpose Flour • ¼ cup (55g/2 oz) Salted/Unsalted Butter, Melted • Good pinch of salt
Method:
1. Peel and dice the potatoes. 2. Place in a saucepan and cover with cold water. 3. Bring to a boil and simmer until soft before draining the water off them. 4. Allow to cool slightly before adding melted butter and salt, mash until smooth. 5. Add in the flour and mix until it comes together into a round ball. 6. Turn out onto a lightly floured area and gently fold over until smooth. 7. Divide into two equal portions and form each into a ball. 8. Roll one ball out to about 1/3″ thick, then cut into quarters. 9. Repeat with the second measure of dough. 10. Heat a pan to medium-high. When hot, begin cooking the Irish potato bread (do not use oil or butter.) 11. When brown on both sides, place on a clean tea towel and cover. 12. Mmm, Scrummy!!
