How To make Irish Potato Pie
6 large eggs
1/2 cup green onions
chopped
1/2 teaspoon pepper
1/2 teaspoon salt
6 ounces Swiss cheese :
grated
3 cups cooked potatoes peeled and diced
4 ounces ham :
diced
1/2 cup green bell pepper -- chopped
1/2 cup half and half
Preheat oven to 350 degrees F. Generously butter 9-inch pie dish. Whisk eggs, onions, salt and pepper in large bowl. Add potatoes, cheese, ham, bell pepper and half and half. Stir to blend. Pour into prepared dish. Bake until set, about 1 hour 20 minutes. Cut into wedges.

Cheesy Potato Pie Recipe by Shaun & Michelle ???????? Foodie Nation
Michelle and Shaun whip up a comforting cheesy Potato Pie, a perfect accompaniment to your Christmas dinner:
Yield – 12 to 15 Servings
Ingredients
Potato – 5 lbs (2-inch cubes)
Margarine – 8 oz
French Margarine – 2 oz
Onion – 1 ½ cups (finely chopped)
Pimento – 1 cup (finely chopped)
Flour – 1/3 cup
Evaporated Milk – 24 fl. Oz.
Salt – 1 tbsp
Black Pepper – 1 tsp
Onion Powder – 1 tsp
Garlic Powder – 1 tsp
Paprika – 1 tsp
Cheese – 1 ½ lbs (shredded)
Method
1. Add your potato to simmering water and allow to cook until tender (about 12 to 15 minutes).
2. Strain and set aside, allowing excess water to drain off.
3. Preheat your oven to 375 F.
4. Heat a medium sauté pan over medium heat.
5. Once heated, add margarines.
6. Once melted and bubbly, add onions and pimento and allow to cook until translucent (about 3 minutes)
7. Whisk in flour.
8. Continue to whisk until your mixture has thickened to a paste.
9. Slowly whisk in your milk.
10. Add your seasonings, flavorings & ½ lb of cheese.
11. Add your milk and cheese mixture to your potatoes.
12. Mix until evenly incorporated.
13. Transfer to your greased pyrex dish.
14. Top with remaining cheese.
15. Bake for 45 minutes or until the cheese is golden brown in colour (if this has not been achieved after 45 minutes, you can turn your broiler on high and let broil until your pie has reached your desired colour).
16. Remove from oven and allow to cool for 30 minutes before enjoying!
