How To make Jamaican Red Pea Soup
1 lb Smoked ham hocks; chopped
-or salted pig's tail 1 lb Stewing beef; cubed
2 c Kidney beans, dried
4 qt Water
4 sm Potatoes; peeled and cubed
1/2 c Coconut milk; optional
1 Onions; chopped
2 Green onions; chopped
1 Sprig fresh thyme
1 Hot pepper
Salt Soak the pig's tail overnight in fresh water to cover. Then thoroughly rinse the pig's tail (or ham hocks) in cold water. Combine in a large heavy sauce- pan with the beef, dried kidney beans (if using canned beans don't add at this time), and the water. Cover and cook over medium heat for about 1 hour, until the meat and beans are tender. Add the potatoes, coconut milk, and any other peeled root vegetables or dumplings along with the onion, scallions, thyme and hot pepper. (If using canned beans, add at this time.) Add salt to taste. Stir the soup and allow to simmer for 1 hour. Remove the whole hot pepper and thyme sprig before serving. Serve hot. This is even better served the second day.

2 twigs fresh scallion & thyme
Whole green scotch bonnet pepper
2 pimento Peppers (for flavor)
1 1b sweet potatoes
1 1b yam
(Potatoes & Eddoes) choose your provisions
Carrot & Pumpkin
1 pack Maggi beef soup ( or cock soup)
A bit of seasoning for flavor
Pimento seeds (optional)
1 cup coconut milk (power, can or fresh)
Cornmeal dumplings (flour, cornmeal, salt)

1 cup red kidney peas
6 cloves garlic
1 Tsp pimento seed

1 Tsp salt

2 cup plain flour
1/2 Cornmeal
1 Spoon salt

1/2 White yam or yellow yam

Small amount spring onion
1 Grace cock flavour noodles soup mix
1 can coconut milk
1 Spoonful all purpose seasoning
1 Tsp salt
Totally cooking 2 hour and 20 minutes

For this peas soup you'll need...
2 cups Red beans (kidney) (soaked)
1 large carrot
2 scallions
4-6 sprigs thyme
1 medium onion
1/2 teaspoon black pepper
2 bird's eye pepper
4 cloves garlic
6 pimento berries (allspice)
2 lbs of salted pig tails (prepared)
10-12 cups water
4 medium potatoes
1 cup all purpose flour
1/4 cup water (for dumplings)
Optionally you can add stewing beef, yam, sweet potato as well as other ground provisions.
