Jelly Bean Surprise Cupcakes
Fluffy homemade cupcakes filled with jelly beans.
Ingredients:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 cup milk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Ingredients for Buttercream Frosting
1/2 cup butter, softened
2-3 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract

INSTRUCTIONS
Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in milk, vegetable oil, eggs, and vanilla extract, whisk until smooth.
Evenly divide cupcake batter between the prepared cupcake liners. Bake for 15-18 minutes. Let cool completely.
Beat softened butter with powdered sugar, milk, and vanilla extract until smooth.
Cut the middle out of each cupcake, and place jelly beans into the center of each cupcake, place the top back onto the cupcakes. Pipe frosting onto cupcakes and decorate.

But fortunately, you need no special occasion to make this delicious, celebratory, kid-friendly, and deeply nostalgic confetti cake. A tender white birthday cake studded with rainbow sprinkles and covered in smooth, tangy cream cheese frosting, it tastes like childhood (which is to say, better than the box). Three 9-inch cake pans
Ingredients:
Confetti Cake:
Butter for the pans
5 1/2 cups cake flour (23.3 oz/ 660g)
2 1/2 cups sugar (16.4 oz / 466g)
4 1/2 teaspoons baking powder (0.63 oz / 18g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)
3/4 teaspoon baking soda
3 sticks unsalted butter (12 oz / 340g), at room temperature
1 1/2 cups buttermilk (12.7 oz / 360g)
1/3 cup neutral oil, such as vegetable or grapeseed (2.6 oz / 75g)
3 large eggs (5.3 oz / 150g), at room temperature
6 large egg whites (7.4 oz / 210g), at room temperature
1 tablespoon vanilla extract
1/2 teaspoon almond extract (optional)
1/2 cup store-bought rainbow sprinkles (3.3 oz / 93g), plus more for decorating

Jellybean Explosion Cake
This is a great cake to celebrate Spring! A blend on Lemon, Orange and Strawberry layers, create a festival of fruit flavors. When you cut into this cake, a explosion of fruit flavored jellybeans spill out.
Ingredients:
Cake
o 3 cups cake flour
o 2 cups granulated sugar
o 1 teaspoon baking soda
o 2 teaspoons baking powder
o ½ teaspoon salt
o ¼ cup canola oil
o 1 cup unsalted butter (at room temperature)
o 1 cup buttermilk (at room temperature)
o 3 eggs (at room temperature)
o 2 egg whites (at room temperature)
o 2 teaspoons vanilla extract
o Bag of fruit flavored jellybeans
Lemon Layer
o Zest of half a lemon
o 1 tablespoon lemon juice
o Yellow gel food coloring
Orange Layer
o Zest of half an Orange
o 1 tablespoon orange juice
o ½ teaspoon Grand Marnier
o orange gel food coloring
Strawberry Layer
o 1 teaspoon strawberry extract
o Pink gel food coloring
Vanilla Frosting
o 5 ½ cups confectioner’s sugar
o 1 ½ cup unsalted butter (at room temperature)
o 1 teaspoon vanilla extract
o ¼ cup tablespoon heavy cream
o A pinch salt
Instructions:
1. Preheat oven to 350 degrees, oil and flour three or three 9-inch cake pans. Mix flour, baking powder, baking soda and salt together in a bowl. Set aside for later.
2. Using a mixer and paddle attachment, cream butter and sugar on medium. Add whole eggs and mix. Add in eggs white and mix again on medium. Pour in canola oil and vanilla extract, mix until well blended.
3. Add dry ingredients, to mixer on medium. Rotating between adding the flour mixture and buttermilk. Pour even amounts of batter into 3 separate bowls. For the lemon layer, whisk lemon zest and juice to one of the batter bowls. Add in yellow gel food coloring until the batter reaches a pale yellow. In another bowl of batter whisk orange zest, orange juice and Grand Marnie. Add in orange gel coloring until you reach a pale orange. In your last bowl add strawberry extract and whisk. Add in pink gel coloring until you reach a pale pink. Pour each bowl into a 9inch cake pan.
4. Bake for 20-25 minutes or until inserted toothpick comes out clean. When done, remove cakes and allow to cool.
5. Using a mixer with paddle attachment, cream butter. Slowly add in confectioner’s sugar. Next add in heavy cream, vanilla extract and salt (if desired). Mix until smooth and creamy.
6. Start with strawberry layer, using a 3inch cookie/biscuit cutter, cut a hole in the center. Frost the remaining layer with vanilla buttercream. Next place the orange layer in top and repeat the process. Fill the whole with your favorite Jellybeans until level with the top layer. Add on the whole lemon layer and frost the entire cake.
