How To make Killer Pancakes
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 egg whites
16 ounce can juice-packed fruit cocktail
drain/reserve juice
maple syrup :
OR chopped fresh strawberries -- macerated with a little sugar
Preheat the oven to 350=B0. Spray 2 nonstick cookie sheets with vegetable= oil an set aside. Sift dry ingredients together and set aside. Beat the egg whites until frothy. Beat in the juice. Gradually add the dry mixture, stirring until well blended. Fold in the fruit cocktail. Using a 2 Tbsp. measure*, scoop dollops of pancake batter onto the sprayed pans, leaving a least 2" between pancakes. Bake for 10-15 minutes or until puffed and golden. Serve hot with maple syrup fresh strawberries, peaches or other fruit.=20 *2 Tbsp. measure =3D coffee scoop.

These delicious pancakes are my weekend go-to so I thought I'd share the recipe with you today in case you're looking for ways to pass the time while you're stuck at home. The key with this recipe is to sift all of the dry ingredients and be sure to beat the egg really well - this will guarantee super fluffy pancakes every single time.

Extra Fluffy Protein Pancakes
Ingredients
¾ cup plain flour sifted
¼ cup of protein powder
2 tsp baking powder
pinch of salt
2 Tbs white sugar
¾ cup of almond milk
1 egg
2 Tbs butter, melted
1 tsp vanilla extract
Method
Combine sifted flour and protein powder along with the sugar, salt and baking powder into a bowl and mix well.
In a separate bowl, mix the egg, almond milk, vanilla and melted butter together. Be careful not to use hot, melted butter as it may cook the eggs.
Pour the wet ingredients into the dry ingredients and stir till mostly incorporated. The batter should be thick and a little lumpy – don’t over stir.
Heat a frypan and coat it with a little butter. Add scoops of batter into the pan and cook until bubbles start to form on the top surface.
Flip and enjoy.
