How To make Lazy Day Coffee Cake
2/3 c Margarine; softened
1 ts Baking soda
1 c Sugar
1/2 ts Salt
2 Eggs
1 ts Nutmeg
1 c Sour cream
3/4 c Pecans; chopped
2 c Flour
1 ts Cinnamon
1 ts Baking powder
Cream margarine and sugar until light and fluffy. Add eggs and sour cream; mix well. Combine flour, baking powder, soda, salt and nutmeg. Add to batter, and mix well. Pour batter into greased and floured 9x13-inch baking pan. Combine brown sugar, pecans and cinnamon; mix well. Sprinkle 1/2 of this mixture over cake batter; swirl mixture through batter. Sprinkle remaining 1/2 mixture evenly over cake batter. Cover and chill ovenight. Uncover and bake in preheated 350 degree oven for 35 to 45 minutes, or until cake tests done with a toothpick. -----

This Sorghum Cake - a Sorghum Spice cake uses sorghum syrup as a flavour ingredient. This community cookbook recipe from Michigan may have nothing to do with Southern Cooking other than this old cookbook recipe contains Sorghum.
Southern Coffee Cake
1 cup sugar
½ cup shortening (lard or butter)
1 egg
1 cup sorghum molasses
1 cup cold coffee
½ tsp nutmeg
3 cups flour (sifted)
½ teaspoon cloves and cinnamon
1 teaspoon soda
¼ teaspoon salt
1 cup raisins and nutmeats
Cream sugar and shortening. add egg and beat well. Add molasses and coffee. Add flour, nutmeg, cinnamon, cloves, soda and salt mixed and sifted together. Then the raisins and nutmeats. Bake in a moderate oven, 350 degrees.

I grew up with this cake. It is so simple, so delicious, you can't go wrong. Definitely give this one a try.
Lazy Daisy Cake | Cococut Flake Frosting
If you like coconut flakes in your desserts, then you will enjoy this cake. It has a simple 4 ingredient coconut flake frosting that is broiled on top of the cake. The sweetness of the brown sugar in the frosting makes this cake irresistible.
Ingredients
4 eggs
2 cups granulated sugar
2 tsp. vanilla
2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 cup butter
1 cup milk (regular)
Topping:
1/2 cup Half & Half Cream
2 cups sweetened coconut flakes
3/4 cups butter (melted)
1 1/2 cups brown sugar
I forgot to show when I mixed the egg mixture with the dry ingredients. I mixed them while waiting for the butter and milk mixture to cool off.
